Roasted Pork with Apples from Heart Healthy Living Magazine Fall 2009 by Ronnie September 27, 2009
Preheat oven 425〫
1 tsp snipped fresh sage or 1/2 tsp dried, crushed sage
1 1lb pork tenderloin
1 TB canola oil [I use olive oil]
1 med red onion, cut into thin wedges
3 med (1lb) cooking apples [granny's], cut into 1/2" thick wedges
2/3 c. apple juice or apple cider
fresh sage [optional]

in a sm bowl, combine the snipped sage, 1/4 tsp salt, and 1/4 tsp black pepper; rub all sides of the tenderloin. in a large skillet, brown pork in hot oil over med heat, turning to brown all sides [this helps keep the moisture in the meet].

transfer pork into a shallow roasting pan. add onion to pan. roast uncovered at 425〫for 10 mins. stir in apples; roast 10-15mins more or until the pork registers at 155〫. transfer to platter. cover with foil for 10mins. in a small saucepan, bring apple juice to a boil, simmer uncovered for 8-10mins. drizzle over meat and apple mixture. garnish with additional sage springs [optional]. 4 3oz serving size. per serv: 239 cals, 6g fat, 74 mg chol, 2 g carb, 3 g fiber, 24g pro.

Peekytoe crab and smoked salmon terrine with pickled mustard seeds paired with Cava "L'Hereu Reserva" Raventos i Blanc Brut 2006.

Tempura of Portuguese sardines with Iberico chorizo and baby gold peach consomme (amazing!) paired with Vinho Regional Minho "Auratus" Quinta do Feital 2008.

Four Story Hill Farm Guinea hen with chanterelle mushrooms and green curry paired with a Barbera d'Alba "Vigna Martina" Elio Grasso 2005.

Millbrook Farm venison loin with preserved lemon, black mission figs, and charred cinnamon (wow!) paired with Susana Balbo "Crios" Malbec 2008 (great pairing).

And for dessert, red raspberries with honey and sage (fantastic ending).

- cut coconut milk to small can (5oz), added water as needed
- used chicken thighs (removed skin after searing)
- syphoned off oil/fat at end
- used block Tamarind (first time I tried it, and it was the flavor I was missing from the restaurant version!)

Pot Stickers (from October issue of Everyday Food)
great flavor, but stuck to the pan, so were a total mess on the plate. (prob cheap quality of wonton wrappers I bought)

---- grilled under panini press

Pasta Salad
bowtie pasta
chopped red pepper
feta cheese crumbles
parmesan cheese
Italian Salad dressing
grainy mustard
light mayo
black beans
 
Mushroom Ravioli in Sage Madeira Broth by Marietta September 19, 2009
Reconstitute dried porcini mushrooms in boiling water, chop, keep broth
5-6 button mushrooms, chopped
garlic
green onions
-------------- saute all, then add:
Neuschafel Cheese


assemble ravioli in 2 wonton wrappers each

Sauce:
butter roux
chopped sage
madeira
mushroom broth
salt
toasted walnuts
small pat butter to finish

Covered boil in dutch oven:
Rice
add halfway thru, recover:
chopped cauliflower
+ garlic salt

saute pan:
garlic & onion
Cubed chicken breasts
add box of thawed spinach (squeezed dry)
+ salt & pepper
add to dutch oven

saute pan:
roux
wine
milk
fresh oregano
+ garlic salt

lots of crumbled feta cheese

mix all in casserole 15-20 minutes 375

large pizza deal with Italian sausage, green pepper, and green olives with 10 classic chicken wings. blue cheese dip. coca cola, fresca, tangerine fanta, barq's root beer.

yum yum, so unhealthy but it's my favourite sin-food delivery.

not too sure the blue cheese dip was a good choice, however, as it made me kinda ill for a while. I'll skip that next time.

Only fair -- too liquidy (cornstarch might be failing). Better with garlic salt sprinkling on plate. Needs to be thicker sauced. Higher heat during stir fry.

---excellent -- owes a lot ot the bread, neede more sauce

zesty salad dressing
spoon of mayo
3 squirts of dijon grain mustard
green onions chopped

i overcooked the pork tenderloin. WAAAAAAAAAAAAAAAAAY overcooked it.

so i improvised. who says sliced ham deli meat can't double as a main entree? ;p

steamed farmer's box carrots and green beans - farmer's box fresh salad goodies.

corn muffins with butter and honey! :D

This was my 2nd time making ricotta. It is not smooth and creamy like grocery ricotta, but it is really rich and delicious and SO EASY!

From Food Network Mag -- substitutes cauliflower for some of the usual cheese.

I wouldn't say that its a mimic of my lover, true cheese-loaded mac, but its good (and quick!) as an alternative to the heavy version, ( as long as you sprinkle on some extra salt ).

A unique take on traditional lasagna where, instead of layering, ricotta and mozzarella are rolled up inside individual lasagna noodles and then covered with a fresh basil-tomatoe sauce and a romano-parmesan mix. Somehow it tastes better this way...yumyum.
