same ol same ol. tonight's was a bit soupy... but i didn't mind. i think i could eat sauteed bok choy and onions everyday.

served up with boxed egg rolls.

This was another one from a couple weeks ago, but am just now able to download photos! Homemade pasta sauce, meatballs and caesar salad was on the menu that night. Spicy sauce, moist meatballs and garlicky caesar salad, topped with freshly grated parmigiano reggiano...can't go wrong!!!
 
Feta Chicken and Green Beans with Chocolate Cake for Dessert by Laura August 30, 2008
Chicken breasts marinated in lemon juice and topped with chopped tomatoes, green bell pepper, green onion and feta cheese - baked in the oven for 45 min - juicy, low fat and flavourful! Steamed the green beans in the microwave, then added them to a pan of toasted walnuts, tossed with balsamic vinegar, seasoned with s & p then, in the serving dish, topped with herbed goat cheese. Delish!!! I had leftover buttercream frosting in the freezer and my husband really wanted a cake, so I made him one! Don't laugh, but I had chocolate AND vanilla frosting, so I made a black and white cake (remember 'Seinfeld' and the black and white cookie?).
 
Tortellini and Black Bean Soup by Laura August 30, 2008
Meat-filled tortellini (but you could use cheese) and black beans, simmered in a base of chicken stock and canned plum tomatoes, with chopped carrots and onion, seasoned with basil and oregano, hot chili flakes plus s&p, to taste. A slice of whole grain bread for dipping...mmm. I actually made this last week, but was not able to post photos until now...lol.

Homemade meatballs (leftovers from our pasta dinner the other night) smothered in pizza sauce and topped with an aged, white cheddar cheese. Tucked them under the broiler until the cheese melted and the bun toasted a bit...mmmm, toasty. Decided we needed some veggies, so we steamed some baby carrots and broccoli until tender crisp and then sprinkled lemon juice on top to brighten them up a bit.

I left work early today to get my hair cut (ok, I got a colour and hi-lights too)...then we thought we'd go to the mall and do a little shoe shopping (no luck). In between the salon visit and shopping we needed dinner, so we hit the restaurant at the mall (Moxie's). I ordered:

Warm tandoori marinated wild salmon filet perched on a bed of mixed greens, tossed with mango, onions, sunflower seeds, water chestnuts and a mango and sweet chili dressing, served with melted brie on naan bread. It was not bad, but I thought the salmon serving was a little on the small side. Maybe because I hadn't had salmon in a while I was just greedy! lol.

Pre-dinner beverage: white cosmo martini (absolut mandarin, triple sec, white cranberry juice and a squeeze of lime juice)

Dessert, shared with husband: banana caramel xango (chan’go)
Which is a creamy, light banana cheesecake wrapped in a pastry tortilla, dusted with cinnamon-sugar and served with warm caramel, ribbons of chocolate and french vanilla ice cream. Yum! Oh, and I had a coffee with dessert...I'm off tomorrow, so didn't have to worry about staying up late...yay me!!

4 C's = Chicken, Corn, Carrots, Celery

i diced up 1 white onion, 1 rib of celery, 5 big carrots and 3 russet potatoes. baked off 4 chicken breasts with olive oil and S&P. warmed up some chicken broth and added some bouillon for that extra ooomph. sweat the onions for a few minutes in goooood fatty butter, added the veg then the broth. let that bubble for 20 minutes or so and did the roux thing to thicken it. (roux being cream and broth) added it back together and simmered for about an hour. added fresh cut parsley in the last five minutes and the house smelled yum!

served with leftover buns from the BBQ nite toasted up with a little garlic butter.

homemade smores in the mic for dessert. yes, mic'd smores impress my kids. ;)

we decided to try the greek place in town and i am SOOOOOOO glad we didn't let the outside steer us away. it was FAB!

started with some of the best dang hummus i have ever had! warm pita bread to scoop it up... just typing it makes me want to go there for lunch today!

i had a chicken gyro and it was divine. i adore tzatziki sauce and it was awesome. what is it about tzatziki and cucumbers? perfect combo. it was served with fragrant rice and veggies on the side.

feta loving hubb had a very dry wine and lamb souvlaki and the kids... well... what do you expect from a 3 & 4yr old? they had spaghetti. but the owner fell in love with them and actually followed us out to our car to tell them to come back! LOL! she even gave me little chocolates and said in a heavy greek accent, 'you will come back, they are lovely, they must have more spaghetti' LOL!!!

capped it all off with baklava on the house - i told you she loved my munchkins! :)

Recipe: Put a weekend's worth of leftovers into a pan with olive oil & garlic, and one can hardly go wrong. Leftovers included: Basmati rice, broccoli, tandoori salmon, beans & tomatoes. I was the only one at home, so I was gleeful and guilt-free about this one-stop meal. At the end, I had raspberry sorbet for dessert.

i am a HUGE weezer fan... so we call the kids this. thing 1 is "pork'n" and thing 2 is "beans". so this dinner is funny.. well.. to us it is! :)

slow roasted a pork tenderloin for the better part of 5 hours today. nothing fancy... a little beef broth and S&P that's it. shredded it and poured over hot honey BBQ sauce. (bottle) toasted up some normal dinner rolls with a schmear of garlic butter.

served up with sliced dill pickle slices, baked beans (can) and slow cooked green beans (looooove these.)

(green beans: usually i fry up some bacon... and crumble it up... saute a diced onion in the gooooood fat and then pour in a bag of frozen green beans. slow cook it for maybe an hour? SOOOOOO not healthy - but SSOOOOOO delish!)

monica... this dinner is a direct answer of your last posted dinner. see what you made me do! i hope you're happy! ;)

Pulled pork and dry style country ribs. Fresh, hot, and fresh kettle style potato chips, corn of the cob, and fresh brewed iced tea served in a huge mason jar.

alrighty, some major code changes to the newsfeed system have been implimented.

With the new facebook profile (which you all will be forced to use sooner or later, I imagine), dinner posts & comments will show different image sizes (based on your profile settings) in the Newsfeeds plus comments actually appear in the feed instead of the usual "so and so commented on this dinner".

You'll see what I mean (well hopefully..provided that my code doesn't destroy the internet).

Image upload has been upgraded to a max of three megabytes per image plus tiny photo thumbnails now appear in the profile box.

Please let me know if you encounter any nasty error messages (a copy of the error message would be super helpful too).

my kids think it's funny i've been taking pics of our dinner... so this morning they asked if i'd take a pic of their breakfast and post it! LOL!

so the kids had vanilla yogurt, with whole grain cheerios, dried cranberries and fresh blueberries. (((i personally can't stomach yogurt... so i had coffee and a bagel)))

they're excited to see it up on the site... my son especially. he's mom's helper in the kitchen. :)

picked one of these up at costco, not bad. not great. definitely better than the time and mess to FRY a turkey. ((which if you haven't had - is TOTALLY worth it.))

my kids don't like potatoes (weirdos) so i picked up a packet of new instant pots for hubb and i. i say 'new' because it's a newer brand using yukon gold pots. it was not bad for instant!

made gravy, but it came out awful. :/ turkey breast without gravy is a bleh deal for me. the only thing saving it was it was fried, so it had plenty of moistness.

had a bunch of veggies about to turn to a life of crime, so i made a veggie melange as a side dish. zucchini, snap peas, carrots and purple onion shreds.

This is a corn chowder based soup that I "souped" up with green chilis, roasted jalepenos, yellow and green onions, corn kernels, pickled corn relish, etc... with a sprinkle of cilantro for my hubby and a splash of cream.

After I grilled the chicken, I chopped it up and put it in the soup. Perfect!

Maybe next week we'll have some food from a different nationality? :)

My long true friend. My fallback. My saving grace. The dinner to make when it is too much effort to make dinner. An acquaintance once told me her kids didn't like scrambled eggs. "You poor thing," I could only say.

You can serve them plain on a plate with ketchup. If you have the energy, you can make them into a sandwich with cheese and toast. Fruit is nice on the side. Fruit is a perfectly respectable side dish and kids are more likely to eat it than veggies. Blueberries have huge amounts of anti-oxidants, think about that.

Make tonight a scrambled egg night!

Usually I roast a chicken with a lemon stuffed inside. I didn't have a lemon but I had oranges. Why not? I zested it and rubbed the zest on the skin with olive oil and salt. I squeezed one half of the orange all over and then stuffed the other half inside with a head of garlic broken up (but not peeled, because Laurie Colwin says the refined slob does not peel the garlic nor does she truss the chicken with expensive kitchen twine)

Roast for 2 hours at 325. Yes you can do shorter at a higher temp but slow roasting is best. Wow does this smell good in the oven! Everyone who came into the kitchen asked if I was baking a cake.

I let the chicken rest for 20 minutes and meanwhile, skimmed the fat off the pan juices and boiled them down with some Triplesec. It's orange-flavored, what the hell.

Served with roasted fingerling potatoes and green beans from the garden.

the star tonight was potato. Cooked in chicken stock (which I, domestic goddess, had made on Monday in a mother earth moment to nurture ailing child, who promptly vomited, but that is another story).
The potato was good - actually great - cubed and halfway submerged in the stock, baked until creamy and tender, and crispy on top.
Served with a side of steak, and some steamed shredded cabbage, which I have a particular fondness for atm).
Said child, now recovering (but still, cough cough to ill for school) ate the potatoes, ignored the steak, and played with the cabbage. So the dog was happy too....

Tonight, we had a very, very simple meal. Baked eggs in a mashed potato nest (parmesan cheese on top), and a salad of Roma tomatoes and balsamic dressing. (If you notice, I tend to pour balsamic dressing over almost everything). Oh, and those beloved nectarines at the end---almost forgot to mention those!

ooooh yes. been craving tacos and enchiladas for a while now. born and bred in south texas, i have a sensor that goes off every once in a while that commands me to eat large portions of gassy, cheesy, greasy foods.

a cheese enchilada and a beef taco consumed with MANY tortilla chips, refried beans and rice. i guess i can TRY and feel good about the guacamole! :)

box of garlic cous cous. (a main staple in our house as the kids like it and it's ready in 5 minutes!)

cut up asparagus and sauteed red onion. (kids had mic'd broccoli and corn on the cob, not fans of the asparagus.

We had lots of visitors this weekend - family visiting from North and South - and it was one of those drop in and say hello affairs for local friends and family too, which seemed to spread across several meals.
the menu:
Turkish breads with a variety of assemble-your own fillings
Lentil, feta, parsley, couscous salad
Potato salad (the old fashioned way, with egg mayo and boiled chopped egg)
balsamic roasted onions (an idea shamefully stolen from this forum - they were great)
tomato and fresh mozzarella salad
Tatziki
fresh and tender baby greens - rocket and spinach mostly
crudite - snow peas, carrot and celery
fruit platter - strawberries, rockmelon and pawpaw
a slow roasted (bbq'd) rump of yearling beef,
assorted deli meats

I also made some cupcakes (honey) with a berry icing (frozen berries - fresh not quite in season here)- which were lovely, tart and tasty topping on honey sweet cake - but BRIGHT pink and messy. A second batch had cinnamon icing...with a much more professional finish.

some unsuccessful kite flying, a lot of lounging, laughing and general companionship - perfect weekend, really.

this came out quite tasty... wish i had remembered to put the razzle frazzle camera BACK into the kitchen!!!!

tilapia in a shallow baking dish sprinkled with olive oil and old bay, dash of S&P. baked at 425 for 15 minutes.

steamed white rice with peas.

steamed pkg of broccoli, carrots and snowpeas.

when i took the fish outta the oven i let it sit for about 5 minutes and then spritzed half a lime over the batch.

family licked their plates clean... i was very surprised!

I wish I could say I made it all, but I actually picked it up at our local health food deli.

A friend and I dreamed up the notion of a little lemonade "do," so I made Blackberry Lemonade, and there were about 6 other types (including Mango Lemonade, Lemonade Tea and Lemon-Limeaide). Rice cakes, popcorn, cheese bites, corn chips, and veggie snackies went along with. Brief, sweet way to gather on a summer night. Oh, and there was liquor available for those who wished to "doctor" their libations! (Having just recovered from a migraine, I was NOT in that category...:)

Patrick brought me soup and assorted painkillers for my migraine, then he gave me a massage (he's trained...I mean as in trained massage therapist, y'know...). What a man, I mean it. When I'm on my deathbed (which I thought I might be by evening), I hope he's there. I've now returned from the near-dead, and am heading into full-sleep. Better, better....

Dinner That I've Not Made Yet (After a Horrible Day!) by Caitlin  August 12, 2008
Arrgh...too many work crises in one 24-hour period. I'm trying to keep cool, and I'm hoping dinnertime makes a difference in my world. Here's what's on the menu (but I haven't cooked it yet): Baked Salmon with Lemon & Rosemary, Broccoli Salad, and Fruit salad (basically strawberries and grapes). There's a mad crisis on one of my consulting assignments, and I have to stay perched near my computer for the next few hours, in order to help resolve things----so I won't be completely relaxed for awhile. In the meantime, I'm going into the kitchen,to fire up the oven, and, though I'm not a big drinker, I think a nice glass of white wine is in order right about now! Cheers, y'all!

Starkist came out with their Tuna Creations some years ago and our dinner table was never the same. I either use the lemon pepper or the garlic-herb. For some reason the garlic-herb doesn't show up much in stores; when I see it I grab like 6 of them.

To two packets of tuna add minced onion (fresh or dried), chopped parsley, parmesan and bread crumbs. An egg to bind. Or mayo. Or olive oil. This is one of those things where you follow the recipe once and forever after that you wing it. Minced red bell pepper works nice in here, too. You're basically making meat loaf, with tuna, and molding into little patties. Fry in olive oil. These are awesome with cous-cous.

Tonight, JP got the idea to roll the patties in sesame seeds which sounded good in theory, but in the end there were more sesame seeds in the frying pan than on the patties. No matter, we scooped and sprinkled them on the leftover lentil salad.

We eat these at least once a week.

again we were patrons at a local cafe/diner. i had a big breakfast, as did the kids and hubb had a LARGE taco salad.

was a rough/weird day where everything i touched went to crud. (and that's me being polite!) so i was not up the challenge to screw up dinner.

today HAS to be better - merely in comparison!

Those golden raspberries on the top shelf of the refrigerator suddenly inspired me. There's no one home but I, so....why not cereal and berries for dinner, with cold organic milk? I love to cook, but a full solo meal didn't really call to me this evening. So, I put on the classical music station, perched myself on the sofa, and enjoyed my little bowl of gluten-free cereal and summer fruit, while the evening sunshine filled the room. A cup of English breakfast tea also called out to me, so my breakfast-y dinner is complete. Golden raspberries are here for but a short time, so it's good to indulge in them as often as possible!

Lentil salad, courtesy of Laurie Colwin's "Home Cooking" (or "More Home Cooking," one of those). I buy these pre-made lentils at Trader Joe's and keep them in the fridge. You thaw them and pop them in boiling water for 5 minutes. While that was going I sauted a shallot and some diced yellow and orange pepper, and sliced up the steak from last night. Mixed all with some fresh chopped parsley and a vinaigrette. None left. All gone.

With this I served the first spaghetti squash from the garden {{applause}}.

Quick Monday night meal - skirt steak sliced paper thin, and cooked with green beans, cauliflower (home grown, thanks Dad), the last of the bok choy, onions and carrots. Flavoured with a simple garlic-soy for the kids, chilli fermented black-beans for the older, jaded tongues. Boiled rice as an accompaniment.
Ray Charles on the stereo - a very fine accompaniment indeed.

found some whole wheat corn/flour tortillas at trader joe's. need to use them as they'll go bad quickly... so i made black bean, chicken (out of a can, bleh) cheese quesadillas. served it up with spanish rice, dollops of sour cream and the hubb had salsa on his. not bad.

For my nephew's pizza-party birthday, I BYOP'd gluten-free pizza, for myself and another guest. I hadn't had it before, and it was surprisingly good. There was also some stellar fruit salad, and, of course, ice cream (coconut/pinapple)--sans cake for me. The best part of the birthday was jumping in the rented bounce house, on a double dare by my brother-in-law. One has to take these little adventures at my age, or the opportunity to do them might slip away! :

one of my faves! started with salmon roll for me, spicy tuna roll for hubb and the kids shared edamame and a cali roll. for dinner: shrimp teppanyaki for me, hubb had steak and scallops and kids shared a yakisoba noodles with shrimp.

hubb insisted we visit cold stone creamery afterwards... not being a huge ice cream fan (yes, i know, i'm crazy)... i am still nursing an orange juice and pineapple with ice smoothie thingy. everyone is STUFFED to the gills and begging for mercy.

The House Husband appeared at the back door with bounty from the garden---so we ate homegrown tonight: Green bean & feta cheese salad, and stewed fruits (small peaches and blackberries) for dessert. Actually, the tiny peaches were a gift from another garden, but everything else (except the feta cheese) was ours. We dressed the salad with some homemade balsamic vinaigrette. I'm off to the theatre, and the H.H. is staying home to practice is midlife passion: Ukulele! Son is out at a concert. We'll all converge back here at midnight, and have some of more that delicious stewed fruit (made by H.H., by the way....)

I'll be honest, I don't know what Shadybrook Farms meant by "turkey London broil" but I bought one anyway. My mom and I figured out it was a whole breast taken off the bone and pounded flat. I marinated hell out of it in your basic olive oil, garlic, worcestershire and chopped thyme. We put it on the grill for 8 minutes on a side and then let it sit for 20, sliced it on the diagnol like you would a flank steak. Wow! It fed the six of us easily with leftovers for sandwiches. I'm buying another and Mom says to pick her one up too.

There are worse things to be addicted to than Tortilla Slaw, but I confess, I could consume buckets of the stuff. However, even Tortilla Slaw should be consumed in moderation, I suppose. It's made up at my local healthy grocery, and occasionally (like tonight, when partner has stomach bug and son is dining with friends), I'll buy a .40 container, eat half now, and maybe some more later or tomorrow. I've never made it, but the ingredients are: Cabbage, carrots, celery, feta cheese and tortilla chips. And it's ambrosia, really-really. But lest one thinks, my, what a healthy dinner, well...I confess that a bag of chips came home with me as well. And some ice cream. I mean, hey, it's Venus of Willendorf day in Austria. I have to maintain my womanly figure in her honor! :) This is definitely hey-it's-Friday-I-don't-want-to-cook-anything fare.

dagnabit, i just realized i MEANT to take a pic and forgot. bad lara.

regular old cellentani noodles with canned tomato sauce.. souped up with sweated yellow onion dices and mushrooms. grated garlic cloves into it before stirring up with sliced olives and pepperoni slices. spread into a LARGE baking dish and covered with slices of mozzarella cheese. baked on 425 for 10-15 minutes and served with garlic bread and salad.

i'm gonna put my camera IN the kitchen so i'll remember next time! :D

Am I vegetarian or not? Honestly, I fall more into the category of "pescaterian," because I do eat fish---or perhaps, more accurately, I'm a "flexitarian." I mostly eat a vegetarian diet, but I do eat dairy and eggs, and I will sometimes even eat chicken and lamb, though I rarely eat red meat (there's a pun there, I see); but if someone else prepares it and puts it in front of me, I pretty much adhere to the Dalai Lama's suggestion that it's polite to take with gratitude what has been offered (and my acupuncturist would tell you that she wishes I'd eat more meat!)

I'm a Buddhist, and there's a lot of debate within the Buddhist community about whether or not it's best to be 100% vegetarian. To many, it's considered a horrible religious violation to eat any kind of meat. However, I have noticed that some of the most strident voices in that regard have no problem tossing back numerous carktails (which is also allegedly forbidden), as they wear their leather shoes! (By the way, I do love my leather shoes and jackets too, and I also enjoy moderate drinking). There are different schools of Buddhist thought, and I don't mean to bore those of you reading this who aren't Buddhists. I just felt like writing about this, this evening. Me, I don't practice judgement on others about what they consume, whether that's Tanqueray or Cheetos. I just think that it's probably important to consume anything with mindfulness, consider where this or that came from, then thoroughly dedicate oneself to the enjoyment factor. When I do have meat, it makes me happiest to know that the animal was free-range or free-roaming before its death, and that its death was swift and humane. One can't always know that, of course, but, it's nice when it's possible. The reason this mini-essay came to mind is because I was recently in dialog with a fellow Buddhist who was feeling guilty about returning to occasional meat eating. I assured him that I, for one, would certainly be in no position to judge him, and wouldn't anyway.

Now, as for what I had for dinner...well, it's pretty humble fare by any standard: A bowl of gluten-free cereal with blueberries and milk. My son and I had teka makki (tuna sushi) and vegetable tempura at lunch, so I really didn't feel the need for much more than some simple something to get me through the rest of the evening. The best part right now is the indulgence of a warm cup of coffee, which I don't usually drink in the evening----but we're having one of those winter-summer evenings in San Francisco, when the fog is rolling in, so I'm cozying up to my espresso right now!

Chicken with Coconut Lime Rice by Suanne August 7, 2008
Preheat oven to 350. Place 4 bone-in chicken breasts on baking sheet, rub with olive oil, season with salt and pepper. Roast for 45 minutes and let cool.

Melt 1 tbsp butter in a sauce pan. Add 1 1/2 cups jasmine rice and stir until coated, about 1 minute. Add 1 1/2 cup coconut milk and 1 1/2 cup water. Bring to boil, reduce heat to low, cover and simmer until rice is cooked. Remove from heat.

Saute whatever vegetables you have on hand with garlic and olive oil. While cooking, take as much chicken as needed off the bone and shred. Add to vegetables for last 2-3 minutes of cooking.

Serve chicken and vegetables over rice. The lime flavoring can come in a few different ways: you can add lime zest and/or lime juice to the saute'd vegetables but I found that the kids don't particularly like the strong citrus thing so I slice lime wedges forthe grownups. I also have something wonderful called Lime Basil growing in the garden and this is awesome chopped up and sprinkled over the rice.

This dish also works well with shrimp.

we eat salmon once, sometimes twice a week. this time i 'marinated' the salmon in brown sugar, chix broth and teriyaki sauce for about an hour in the 'fridge. came out darn good! baked it, next time i might do a grill.

saffron rice (bag) and steamed broccoli. par boiled/pan fried sliced carrots in orange juice. tasty! tooob crescents and iced tea.
 
Not Quite Last Night's Thai Food August 6, 2008

I'm also hoping to inspire more users of DT to take photos of their creations ~ I always find myself wishing there was a photo to showcase your meals, especially once I've read the descriptions!!

I'm queer for eggplant. Particularly spicy eggplant, and particularly the spicy eggplant one can get at Jasmine Tea House (in San Francisco). I go here a few times a month, have had several items on the menu, and have never been disappointed. Lunchtime specials are ridiculously cheap, and I tend to bring home half of my lunch for dinner. Along with the entree, one always gets soup, and, as the waiter gently delivers it, he usually offers one word, in a comforting sotto voce, "Vegetarian"---and he seems to make that humble announcement whether one is ordering vegetarian or not. Anyway, today, for both lunch and dinner, I'm having the spicy eggplant & vegetables, along with rice, and I saved the hot & sour soup for dinner as well. For dessert, I'll likely tangle with a 1/2 basket of those bright red and buxom strawberries I bought at the UCSF Medical Center Farmer's Market.

My son and I had lunch together at a Thai restaurant that I sometimes frequent, but he never would. So, he's decided he likes Thai now, which is good---since this happens to be one of my favorite almost-in-my-neighborhood places to dine. I could never get him to go there before---don't know why the tide turned today. Teenagers always keep one guessing.

Anyhow, he had Pad Se-Eiw (wide noodles and veggies and, in his case, chicken, stir fried)
and I had the Gaeng Garee Tofu (Yellow Curry, including potatoes, onions, coconut milk and cucumber salad on the side). He had lemonade and I had Thai iced tea.
And because he's out with friends tonight, and I brought the rest of my meal home, I'm also calling this dinner.

And....the old man is having to go to work late tonight, so we brought him a curry too, to take to the office with him.

My dinner consisted of honey roasted peanuts, Monster - low carb energy drink and "stride" sweet peppermint gum. I worked last nite in jail...... an awful junkfood fest. The law enforcement in sarasota eat JUNK!!! On the other hand, it can be rachel ray's 30min deal.. I can kick her ass in just 20 seconds... open the can of nuts, pop the energy drink open and shove gum in my mouth!

boiled chix breasts in chix broth, cooled overnight. this afternoon i diced it up very small and added diced green onions, celery, poppy seeds, touch of mustard, mayo and S&P. served on lightly toasted whole grain bread.

HUGEMONGOUS green salad of romaine, butter lettuce and baby spinach, carrot shreds, purple cabbage shreds, regular cabbage shreds, snap peas, cucumbers. (daughter and hubb had tomatoes, son and i loathe them) i had a great herbed ranch dressing purchased from my favorite local brunchy place and the rest of em had orange dressing.

much leftover salad to be consumed by the end of the week. i hope.
 
5-Minute Salad by Caitlin  August 4, 2008
This really only will take 5 minutes, give or take a few:

Goat Cheese, Herb and White Bean Salad (made with cannellini beans)

I'm using assorted greens, with basil leaves and roma tomato slices thrown in for good measure, dressed with balsamic vinegar dressing. After the indulgences of the last week and weekend, this is really all we need, and we'll have tall glasses of peach iced tea with lemon, as an accompaniment. And it's fast!

tonight: tiny sweet lamb cutlets flash roasted on the rib, accompanied by roasted beetroot, the last of Dad's winter swedes, sweet potato, cherry tomatoes, capsicum, quartered red onion, eggplant , garlic and zucchini. Accompany with a slurry of puy lentils with the garlic and parsley mashed through them.

tomorrow: warm the left over veges + some puy lentils through with some balsalmic vinegar, toss through pasta.

Ice cream making does not require an ice cream maker, insists David Lebovitz (ice cream god); so I followed his recipe and advice, and made some outstanding vanilla ice cream using the old-fashioned refrigerator method. The rest of the meal, while quite good, was probably overshadowed by dessert, but here's what we had (and leftovers today):
Parmesan-crusted tofu (& chicken, for the die-hard meat-eaters who were here)
Roma tomato & basil salad,
Green salad,
Roasted Fingerling Potatoes with Peppers and Onions, &
Homemade vanilla ice cream & homemade chocolate sauce,
and we continued to munch on all of the above leftovers throughout today (Sunday).
In celebration, I want to say congratulations to my neighbor, for completing her last round of chemo, and it was a delight to have all those kids running around last night outside. Cheers, bravo and blessings. You're a brave woman, Dr. R.

mayo with ranch dressing and ol' bay for the lite spread on the corn/flour tortillas... sliced green onions... shredded cabbage (thank you, convenience bags) --- quick heat salad shrimps in fry pan with scant olive oil & butter, S&P, quick squeeze of lime juice before serving.

chips and salsa as a side.

The title kind of says it all...... it's a recipe that I got from the Whole Foods Market website (it's quite possibly the best supermarket in the free world) and it was a hit! The original recipe called for Red Snapper instead of Cod, but the cod was on sale, and I kind of like cod better than snapper anyway, so... I served it with brown rice and a white pinot noir. YUM! This was put together by my SIL, who lives just around the corner. It was one of those rare, tranquil extended family get togethers, with visiting BIL, grandparents and cousins, and she has a talent for pulling them together - thanks Rach.
We had a lazy platter of crudites and dips in the back yard, drenched in sun, the smell of greek lamb BBQing and the sound of happy children in the sandpit (even the teens!).
Beautiful lamb, accompanied by a simple rocket, mushroom and capsicum salad, garlic bread and boiled potatoes. dessert was a sinful take on tiramisu - all chocolate, marsala and cream. finished with a lovely vanilla tea.

We ate lunch so late that it really qualified as dinner. I almost ordered the vegetarian taco, but you know, since I knew this was going to be my only meal of the day, I decided to go for the crab enchiladas in avocado sauce, with rice and beans---and I'm glad I did, as I was ravenous. Best of all, I got to spend the time with my 18-year old son, who is difficult to nail down these days---his social life rivals Paris Hilton's. We had a really nice meal, and a great conversation. I was so happy to be with him that I could have been consuming dirt---I didn't care!

The evening began with a Long Island Iced Tea and a basket of fresh whole grain bread with lingonberry butter. Then our appetizer arrived: flatbread bruschetta done in their wood-fired oak burning oven (heirloom tomatoes, basil, cheese and balsamic reduction)...YUM! I ordered the LEMON ASIAGO BREADED WALLEYE for my entree: a Canadian cold water walleye dressed in an asiago cheese and lemon breading, pan fried, served with wild rice medley, fresh vegetables, and a creamy dill sauce. To go with that we shared a bottle of white wine from the Barossa (a blend of some sort...there was some semillon in there for sure, but I can't recall what all else...lol. Crisp and fruity...nice). And to finish it off we shared the chocolate brownie, warm and soft out of the oven. After indulging in dessert we took a stroll over to the Adirondack chairs on the lakeshore and watched the sun set - perfection!
