One thin-crust Margherita and one Italian sausage with cremini mushrooms and goat cheese - with a salad and beer.
 
Pulled Pork Sandwich May 30, 2008
One ginormous Pork shoulder braised for several hours with peppers and onions in a maple/chipotle bbq sauce - shredded, then piled on whole wheat rolls and doused in black pepper vinaigrette. Served with blue corn chips and a green salad.
 
Sam's Shrimp Tacos May 29, 2008
Corn tortillas with Old Bay and lime seasoned shrimp topped with cabbage and chipotole, lime sour cream. Yumm!

Plus, I scored at Sprouts grocery- King Crab Legs for $4.99 a pound! Amazing addition!
 
French Onion Soup May 28, 2008
An easy, non-traditional recipe (used canned beef broth and consomme rather than homemade) with lots of onion and garlic - topped with a couple slices of french baguette and shredded gruyere. Yum! Next time I am going to add wine to the soup...( ;

A very simple and delicious pasta meal: whole wheat penne with sauteed cherry tomatoes, garlic, basil and fresh mozzerella - and a green salad.

Brined pork chops and such May 26, 2008
Apple cider vinegar brined center-cut pork chops:
toasted spices (star anise, black, white, and pink peppercorns, caraway seeds, mustard seeds), cider vin, water, salt, brown sugar. Brined for about 45 min.

Sauteed gala apples and pine nuts-- pork garnish:
olive oil, fume blanc white wine, ground allspice, anise seeds, black pepper, fresh thyme, toasted pine nuts (right before serving so they don't absorb moisture)

Zucchini, maui onion, grape tomatoes, garlic:
sofrito of onion and garlic sauteed before adding zucchini, then halved tomatoes at the end. obligatory salt and pepper.

Brown rice cooked with 1/2 veg stock, 1/2 water, bay leaf, garlic.

Dessert: apricots sauteed briefly in butter, glazed with bit of brown sugar, dash of cinnamon. Served a la mode (vanilla bean ice cream).

Monday night meal by Mr Teen - crepes with added oats for stability and flavour, filled with a rich vegetable ragu of zucchini, mushrooms, grand-dad's home-grown capsicum and tomatoes. He served these lovely crepes with fried haloumi. YUM.

this is the ultimate comfort food - rich, meaty spaghetti sauce, made from scratch with lots of garlic, lean mince and lots of vegetables.
better yet - I didn't make it, and it came with a big glass of a big red wine.

My hubby's horror dinner May 20, 2008
My husband DESPISES fish sticks. I decided to make some from scratch. He tolerated them. I thought they were awesome, but according to him- cod is "junkfood" fish. :)

quick and hearty meal of mustard chicken and polenta.
Sauteed chicken thigh cutlets with bacon, celery, capsicum, onion, broad beans - in a red wine and mustard sauce.
Served with polenta and steamed broccoli.
Choc chip cookies made by Miss 11 after school today for dessert-REALLY good.

grilled steak and eggplant slices

pretty good, but the pasta sauce did not quite turn out as I would have liked it. While both excelent on their own both the eggplant and dandelion greens were very bitter, so maybe only one next time.

Schnepf Farms has a peach festival each weekend during peach season. They cook them on two huge griddles over a fire. There's at least a 30 min wait in line but they were worth it!
 
pumpkin soup with crab and chili salsa May 18, 2008
A crowded house this weekend meant the fridge was pretty bare come Sunday night. The heel of a pumpkin was turned into soup with a few other vegetables hiding in the crisper, some chicken stock, coconut milk, ginger, fresh lemon grass, coriander roots and fresh chili.
Served topped with a crab salsa - tinned crab meat jazzed up with coriander leaves, chili and lots of lime juice.

Nacho cheese mix, bbq sauce scattered here and there, bits/pieces of chicken here and there.

Broiled 3-4 minutes and then served with sour cream and salsa.

Monica's Mexican Casserole Mess May 8, 2008
Seasoned slow roasted pork (I know, I do that a lot!) layered with corn tortillas, corn, black beans, chipotles, onions, sour cream, chipotle cheddar cheese, and enchilada sauce.

It was really flavorful but the tortillas were too mushy. Next time I'll omit them.

Not entirely sure what was in this delicious pasta, as it was waiting for me after a long day at work.
It certainly had bacon, mushrooms, olives and cherry tomatoes, and was quite creamy.
Even nicer because DH made it, and I didn't have to cook...
 
beef casserole May 5, 2008
slow cooked blade cut - on a base of celery, onion, carrot and sweet red peppers , mushroom and diced tomatoes. Seasoned with rosemary, thyme, parsley, a little cumin and coriander seed and plenty of S&P. Tender with a lovely thick and fragrant gravy.
Served with polenta.
 
Apple Walnut Spice Loaf - Recipe for those who wan May 4, 2008
Here's the recipe for those who requested it - I modified the recipe for Apple Honey Bundt Cake (see previous post):

Apple Walnut Spice Loaf
Ingredients:
3/4 cup brown sugar
1/2 cup vegetable oil
2 eggs
1/2 cup honey
1 teaspoon vanilla extract (I didn't have any and it still tasted good!)
2 cups all-purpose flour
1/2 cup oatmeal
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
3 teaspoon ground cinnamon (to taste)
1 teaspoon ground allspice
1 teaspoon ground cloves
1/2 cup unsweetened applesauce
3/4 cup chopped walnuts

1. Preheat the oven to 325 degrees F (165 degrees C). Line two loaf pans with parchment paper and set aside.
2. In a large bowl, stir together the sugar and oil. Beat in the eggs until light, then stir in the honey and vanilla. Combine the flour, oatmeal, baking powder, baking soda, salt, cinnamon, cloves and allspice; stir into the batter just until moistened. Fold in the apples and nuts.
3. Bake for 45 minutes in the preheated oven, or until a toothpick inserted into the crown comes out clean.
