Apple Walnut Spice Loaf April 30, 2008
I used a recipe for apple honey bundt cake, lessened the sugar, added some oatmeal instead of flour, and increased the spices then cooked it in two loaf pans on some parchment paper. YUM... gonna make this one again, definitely.

sausage & corn chowder April 26, 2008
This soup/stew was based on the Smoked Chicken Chowder recipe on Epicurious:

But I had polish-type sausage to use up, so didn't use chicken, although I did use all homemade chicken broth. Also sauteed some thick-sliced bacon and chopped it to bits and added it in.
Used canned jalapenos, and didn't use any chipotle anything, because I couldn't find it. So I flavored the chowder with pepper and some chili powder and some all purpose seasoning.
Basically I wanted to make sausage chowder, and used the original recipe as a base.

Health value: Not sure if the heavy cream should make this a 4 or 3 on the health scale. And sausage isn't exactly health food...

From Martha Stewart Living: "A garlicky fava bean salad brings together the abundant protein and fiber in beans and a slew of antioxidants from corn, cucumber, garlic, and parsley."

My notes: I didn't have fava beans, so I used frozen lima beans and edamame beans, boiled for a couple of minutes. Added more lemon juice because it needed it, plus a little extra salt.

Slow because I prepared the dish in the morning, so the chicken marinated all day in the herbs and garlic, and it cooked on a low heat in the afternoon for a couple of hours. Very tender.

wicked spaghetti sauce April 21, 2008
haven't tried it yet -- it is very tomato-ey and full of delicious vegetables with some spices and a clove of garlic. maybe i should have added another clove or cooked the garlic first. whatever, this is my first attempt to make anything with a clove of garlic. please be kind to me oh great garlic gods.

i made a lot of it and it's starting to make my apartment floor smell delicious. maybe i should invite the neighbours over for dinner.

Easy cheesy spinach quiche accompanied by a roasted vege and pecan salad.
Lots of lovely fresh greens including mint, parsley, spinach and lettuce from mum's garden. I roasted cherry tomatoes, eggplant, onion, mushrooms and parsnip chunks with garlic, and tossed these through the greens with some pecans and a balsamic vinaigrette.

added several spices to my usual fair of highliner wild red pacific salmon, made it much less bland. Nice to have a little different flavour to the baked potato for a change.

broccoli always delicious on its own. yummers.

Its cold here - well not as cold as a Canadian autumn, or an Edinburgh spring, but still icy for us subtropical dwellers.
Warming up with a hearty beef casserole - spiked with plenty of veges and served with mashed potato and Brussels sprouts. yum.

world's easiest chili...
Sautee an onion and some fresh garlic. Add 1lb ground beef & cook till browned. Add a can of chili flavored beans and a can of diced tomatoes. Simmer at least 15 minutes or till you feel like eating. If you have cumin, add that in.

well my dodgy version of a chowder because I've only ever eaten it from a market stall in Seattle...but it tasted great. So a one-pot meal made from a guess-timate of ingredients.
Definitely getting colder here, so a nice wintery meal.
 
Lemon Chicken Salad April 14, 2008
Made a dressing of light sour cream, light mayo, lemon juice (and grated rind), tarragon, salt and pepper. Then, tossed in some diced celery, red apple, green pepper and minced onion...and then added about 2 cups of diced roasted chicken which we topped with a handful of chopped walnuts. Light, refreshing, crunchy, sweet and sour...nice blend of flavours. We probably should've given it some time for the flavours to meld, but we were hungry so we couldn't/didn't wait. ( :

gotta love mid-week stirfry for a fast and tasty one-pot meal. This one was pork mince, green beans, lots of garlic, chili-bean paste, a splash of vinegar and soy sauce, green onions and a generous handful of coriander leaves. Tossed through egg-noodles.

Ms 11 made chocolate mousse for dessert - decadent and delish.
 
Italian Herb & Red Wine Chicken April 14, 2008
This was my own creation and it actually tasted GREAT!! I'm now a huge fan of fresh basil thanks to my friend Kimberley, what a great herb.

So here's what I did: I took some chicken breast, seasoned it with the regulars (salt, pepper, minced scallions, garlic) and added some ground ginger, brown sugar, tons of italian seasoning and topped it off with minced basil. Then I poured some red wine, a touch of oil, some balsamic vinegar and a small bit of butter and baked it covered, and uncovered it during the last 10 minutes. Easy!

It tasted great, and I finally found out how to cook with the red wine my colleague at work gave me for Christmas!! It definitely gave the dish a unique taste.

Yay! No more forced feedings...but I think my mom had an allergic reaction to something in the dish...go figure :S
 
Fast Fried Green Beans April 13, 2008
This is a fast and tasty meal that is healthy and goes with any dish.
Steam fresh Green Beans with water, salt, pepper for 4 mins.
Drain and add a touch of butter and chopped garlic and fry on high for 2 mins.
season to taste and serve immediately

turned out to be completely delicious - fresh chicken sandwich with prebiotic (whatever that is) multiseed / grain bread, with (yeah) process cheese, mustard, and mayo. broccoli & pink lemon aid. used dempsters bread and it is really good - has poppyseeds or something inside - gives a nice little crunch and is so delicious with the chicken & so forth. really pleased with this quick dinner on-the-fly.

haha as if I could make something like that. A real hack job here but it was tasty: I boiled a couple chicken breasts, split them up into nice chunky morsels and then mixed them into an Uncle Ben's premium rice side dish and added some freshly boiled broccoli. Now if I can figure out how to make my own amazing rice side dish, this dish might elevate from good to great.

Pan-Fried Rib Steaks April 3, 2008
I treated myself and a few friends to some dry-aged rib steaks -- they were about 1-1/2" thick, so I pan-fried them on low-to-medium heat for about 8-9 minutes per side, covered, for medium-rare. You can VERY lightly brush the pan with oil to prevent initial sticking. Monitor the heat to ensure that you are not singeing the steaks. Season lightly with salt and pepper before frying!!! Yum.

I paired this with garlic cous-cous (a perennial fave of mine), steamed broccoli, and a fresh mozzarella and sliced tomato salad; in the past, I've also lightly sauteed spinach with fresh crushed garlic in a very small amount of extra-virgin olive oil (again with salt and pepper to taste) and wild rice.

My friends brought a few bottles of red wine, which complemented the meal quite nicely!

I tend to think that you just can't ever go wrong with a hearty steak dinner. Now, rib steaks are one of the fattiest cuts of meat, so I can't call this a "healthy" meal, but it is a good low-carb meal; and, if you have a predisposition to low cholesterol, such a meal now and then will be fine for you.
 
Baked Salmon Dinner April 3, 2008
I seasoned a salmon fillet with salt and pepper and baked it, along with a jigger of white wine in the baking pan and covered with tented foil to retain moisture, at 350 for about 20 minutes. If you're avoiding alcohol, you should substitute the white wine with a few tablespoons of water in order to keep the salmon nice and moist.

Served this with a small side of cous-cous, and chopped up some leftover broccoli and tomatoes (with a dash of olive oil, vinegar, salt and pepper) as a cold side-salad.

This dinner is fairly low-carb, and relatively filling.

Didn't have all of the ingredients for Ma po tofu, so improvised. Basically a stirfry with lots of veges (carrot, capsicum, zucchini, bok choy, spring onion, garlic, ginger and coriander) and cubes of tofu. the flavour kick is the fermented chili-bean paste and it really did kick up the heat!
Served with steamed coconut rice.
