Roasted Pears with Sweet Potatoes - and my twist was instead of adding cayenne pepper, dry mustard and ground ginger, I just used dry jerk Seasoning. YUM! |

anyway, it's nice to eat healthy. thought about putting some yogurt on the potato, but i only have strawberry yog and I don't think that would work. mmm wished I had sour cream and bacon bits and chives..omg slurp. .. but way too unhealthy. |

The soup was Lipton’s (Soupworks brand)...too lazy to make our own today...lol.
For the bruschetta we chopped 5 roma tomatoes and mixed them together in a bowl with olive oil, balsamic vinegar, garlic, fresh basil and a pinch of salt.
We cut the ciabatta bread in half and toasted 4 pieces in our toaster, rubbed them with fresh garlic and then topped them with the tomato mixture. On two of them we added some freshly grated parmesan cheese and put them under the broiler to warm through and melt the cheese.

This dish is soooooo simple and so yummy, I had to post the recipe here. The rice is moist and flavourful - it tastes like you're having dessert!

Apple Brown Rice
- 2 Tbsps olive oil
- 1 x large onion, peeled and chopped
- 2 x local apples, cored and chopped
- 2 cups brown rice
- 1/2 tsp cinnamon
- 4 cups water
- Salt and pepper to taste
DIRECTIONS:
1. Add the onion and oil to a small saucepan and saute over medium high heat until the onion just begins to turn golden brown, about five minutes. Add the apple, rice, cinnamon, water and seasoning and stir well. Bring everything to a simmer and cover with a tight fitting lid. Turn heat to low and cook until water has been absorbed and rice is tender, about forty-five minutes. Without removing the lid turn off the heat and let the rice rest, undisturbed, for another ten minutes or so before serving. |

It was frozen but still healthy and tasty! I buy highlander frozen w.r.p. salmon fillets - quick & easy to prepare - just pop 'em in the oven (frozen) for 20 minutes at 450. One package is good for a couple meals. Never would have thought anything from Highlander would be so healthy.
The salmon is a little bland - perhaps some spices would be nice? I'm not sure what to put on fish & how much. I did brush on a little bit of butter & added some salt & pepper... which reduced the health value a little bit but so be it.
Consumed with assorted frozen vegetables.
A quick, enjoyable, & healthy dinner. Salmon is good for the brain apparently. makes ya smrt! I mean smart. |

We had friends over for a BBQ last night. We marinated pork chops in lime juice, soy sauce, brown sugar, chili and sesame oil. The were a lovely caramel brown after they had been charred on the BBQ.
The apple salad was simple and delish - I would happily eat a bowl of this on its own next time, or with scallops or fish.
Miss 11 prepared a chocolate fondue for dessert, complete with choc chip pikelets, fresh fruit and pecans for dipping. Very nice... |

| Cheater Chicken and Dumplings March 1, 2008 |
| Boil one boneless, skinless chicken breast in about 3 cups of water. Add seasonings (I used salt, pepper, rotisserie mix). Boil until chicken is done. While boiling, peel and chop 3 carrots, 2 onions, 2 stalks celery and 1 clove garlic. Remove chicken from water, allow to cool. Add vegetalbes plus one can of cream of chicken soup to water. Bring to a boil, reduce heat, cover and simmer for 20 minutes or until vegetables are soft. Shred chicken with your fingers and add back to soup. Allow to cook five minutes to get chicken back to temp, then add 1 cup frozen peas. While that comes back to a boil, cut up one can of fridge biscuits into quarters. While heat is on low, add your biscuit bits and stir. Allow to come to a boil (turn heat up some if needed), cover, reduce and simmer for 10-15 minutes. Very good, very quick, very easy. Served with roasted potatoes and sweet cornbread muffins that my youngest daughter loves. She calls them cookies. |
