Leap Year Teriyaki Chicken & Veggie by Lara February 28, 2009
yakisoba noodles - shoulda doused them in some soy or some teriyaki... but i forgot.

cooked up the chix in soy and teriyaki sauces - let rest while i sauteed up 1 onion, added half a bag shredded carrots and snowpeas and snap-peas.

lovely egg rolls. i could eat a meal of just egg rolls. :)

Grilled sockeye salmon marinated in olive oil, white wine and herbs. Also tried a bernaise sauce on the salmon that was outstanding with tarragon vinegar and a little fresh tarragon at the end. I like to grill the salmon in a foil wrap which with holds the liquid, so basically a grilled "poach."

We get the salmon from a brother-in-law who ships it back from Alaska, deboned and sealed. Have never had any better.

Thin spaghetti with a garlic cream sauce and little peas.

My son calls this the perfect meal. Healthy, if not for the cream in the sauce. Great to look at and smell. Fun to make.

Chili Rice Casserole-Monterey Sunday Supper by Maureen February 26, 2009
Brown rice cooked in home-made beef stock, then spread in a 9X13 casserole and cool. (original recipe calls for 1 cup uncle bens and 1 can beef consomme )

Add a layer of sliced pepper-jack cheese to cover cooled rice.
Spread 1 small can of chopped green chiles across the cheese.

layer with thinly sliced zucchini salted and peppered (about 1 very thin or 1.5 kinda thin)
then a layer of thinly sliced, peeled (dip in boiling water for 1 min then run under cold water)beefsteak tomato, salt and pepper (1-2 tomatoes)

then top with a pint of sour cream mixed with the following: 1 tsp garlic salt, 1 tsp oregano flake, 1 tsp dried basil, 2 T chopped bell pepper and 2 T chopped green onion
Spread the sour cream across the top of tomatoes and sprinkle with another layer of Jack or pepper jack cheese.

Bake @ 350 degrees F--20-30 minutes until cheese is bubbly.

*I added to this recipe for the first time in 20 years of making it. I used short grain brown rice instead of Uncle Bens, I used homeade beef stock instead of beef consomme, I added shredded chicken that had been simmered in tomatillo sauce, 2/3 can of drained black beans and then drizzled a little bit of red enchilada sauce over the chicken mixture. I sprinkled with sliced black olives and chopped red piquillo peppers---this layer was on top of the zucchini layer, then the tomatoes went on top of the chicken layer----it was great but try the original first!

This is the recipe my Aunt Betty makes every Christmas Eve with a Cranberry BBQ Pork Tenderloin

From The Joy of Cooking, with a few modifications.

Saute onions, add garlic, ginger, turmeric & garam masala.
Add skinned chicken pieces; brown.
Add coconut milk (original recipe calls for yogurt), simmer briefly, then add chicken stock and cilantro. Simmer until chicken is done. Finish with fresh cilantro and lime juice.

Served with basmati brown rice and sauteed cauliflower. Had I been more energetic I would have made a raita.

Baby back pork loin ribs from Montgomery Inn in Cin Ohio, paired with one rack of my own pork loin ribs. Topped with Montgomery Inn bbq sauce, slightly sweet but very good. Brown rice with carrots, onions, brocolli.

Boys split decision on which one was better. Max favored the Montgomery ribs, more tender and better flavor. Alex favored mine with a traditional rub and good meat chunks. Although I thought the Montgomery were awesome, nothing beats my ribs...

An easy crock pot meal.
Brown a boneless pork shoulder (trimmed of fat & cut into large chunks) in a saute pan with onion and garlic. Place in crock and add dried lentils (1 to 1 1/2 cups...I used red), water, can of chopped tomatoes, some carrot and/or parsnips (I added a carrot and 2 parsnips), celery, rosemary, S & P, and a sprinkling of beef bouillion granules. Cook on high for 5 hrs. The pork just falls apart.
We had a mixed green salad and multigrain bread on the side (for dipping). Filling and healthy!

i've been craving a steak and baked potato alllllll week. since i'm going in for the 2nd half of mouth yuckiness tomorrow morning, i seized my chance.

lovely side salad to start and then a victoria's filet, scrumptious baked potato and steamed veggies.

that would have been all healthy and wonderful, if i didn't indulge in the blooming onion with the fam... and the devilish chocolate dessert to close out the meal.

i'm beyond full. i'm uncomfortable. :/ that'll learn me.
 
Baked Pasta by Laura February 22, 2009
Saute an onion and some garlic, add spaghetti sauce (homemade or jarred...'Classico' isn't too bad if you're pressed for time), a cup of chicken broth and some oregano. Simmer for 10 minutes and then add about 1 cup of this sauce to some cooked pasta (we used shells). Spoon 1/2 of your pasta mixture into a 9x13 pan, top with 1 1/2 cups of mozzarella, some parmesan if you like, 2 cups of the sauce, the remaining pasta mixture and the rest of the sauce. Cover and bake for 20 min at 350 degrees. Sprinkle a bit more cheese on top and bake, uncovered, for 10 min.
Supreme comfort food on a damp and dreary day.

Marinate 2 pieces of steak in 1 tablespoon of olive oil, 3 cloves of garlic (thinly sliced) and 2 tablespoons of rosemary for 1h in the fridge.
Meanwhile, heat the oven to 400F, prick 2 baking potatoes all over with a fork and bake for 45min-1h.
When the potatoes are almost ready, heat a frying pan, remove the steaks from the marinade (save the marinade) and season with salt and pepper. Cook to desired doneness and leave to 'rest'.
Meanwhile add the reserved marinade to the pan and cook until the garlic is golden. Spoon over the sliced steak and serve with the potatoes and sour cream
 
Best Ever Homemade Potato Soup by Teri Jo February 21, 2009
This was the second time I made this and it turned out excellent again! So I guess it wasn't a fluke the first time! :) The hubby sooooo loved it!

Ingredients:
4 Medium Potatoes
+/- 1/2 Cup Chopped Onion
1 1/2 Cups Water
2 Chicken Bouillon
3 T Butter, Cubed
3 T Flour
2 1/2 Cups Milk
+/- 1 t Dried Parsley
2-3 Pinches Kosher Salt (to taste really)
1/2-1 t Pepper (to taste really)


Directions:
In a large pot, bring potatoes, onion, water and bouillon to a boil.

Reduce heat; cover and simmer for 10 minutes or until potatoes are tender.

Now lightly mash, leaving some chunkiness.

In a small pot over medium-medium high heat, melt butter. Stir in flour until smooth.

Slowly stir in milk. Stir constantly until thickened. (Be patient, it will happen.)

Add milk mixture to potato mixture. Cook and stir until thickened and bubbly.

Add parsley, salt and pepper.

Enjoy!


For extra yumminess, sprinkle in some Bacon Bacon from Tastefully Simple (or regular bacon bits) and some shredded cheddar cheese. Yum!

good ol bag of Foster Farms Orange chicken... juiced up!

whilst that was cooking in the oven, i sauteed some snap peas and snow peas in pineapple juice. set aside in a bowl and warmed up some pineapple chunks.

stirred everything in a big bowl with the orange sauce and some green onions. plated with VERY good jasmine rice and egg rolls. quite tasty! :D

Yum! A good turkey meatloaf recipe is hard to find. I don't recall where I got this one. (I use a recipe program called "MacGourmet" that allows me to copy recipes over to what I can only compare to as iTunes with recipes instead of music. Also lets you rescale recipe ingredients to change servings, you can make shopping lists, wine notes, etc.)
I must not have copied over the source of that recipe.

Interesting - calls for shredded apple, fresh parsley, chopped celery and onion, and Dijon mustard! Served with roasted potatoes and a green salad with cucumber and tomato.
Note: recipe calls for 1 lb. ground turkey - my package was 1.25. Not sure if it made much of a difference or not.

Earlier in the week we made a huge pot of tomato and dill soup: made with chicken stock, chopped tomatoes, onion, carrot and dill. The recipe said to blend all the ingredients in a blender to create a smooth consistency, but we were feeling lazy (and don't mind a chunky soup) so we omitted that step.

After a week of salty foods, I felt the need to go back to a basic, no frills heart healthy meal.
Tonight we used our new Stir Fry Pan for the first time - Broccoli, red bell pepper, onion, carrot and chicken, seasoned with pepper, a little low-salt soy sauce, and served with white rice. Yum! Dessert: Someone left a huge box of mandarin oranges at my exercise class today!! Yay, free!!

Never made this before, but we were shopping at our "fancy" grocery store (as the 4 yr old calls it) and this little half rack caught my eye. Searched all over the internet for a good marinade, but didn't have the complete ingredient list for any of them, so I threw together my own. Rubbed it with EVOO, S&P and garlic powder first, then braised it. Marinade: half jar of Dijon mustard, package of fresh mint leaves (run through the food processor), ~ 3 splashes of white wine vinegar. Roasted it @ 400 for 15 mins. Words to describe: superb, divine, died-and-gone-to-heaven good.

Served with steamed baby haricot verts and potato pierogies.

PS - The 4 yr old, who doesn't eat red meat, had a whole chop, said it was "soooo goood." Magic!

Came back from a matinee of Coraline full of popcorn but still hungry. Whipped up a quick glaze of mustard, white wine, Bragg's liquid aminos and garlic. Slathered it over two pork tenderloins and served it with blanched asparagus and plain, salty orzo. Yum.

i made individual meatloafs... wait... meatloaves? for everyone tonight - they loved it!

also toned down my normal meatloaf recipe - ala miss heather here on DT! twas gooood! just a lb of regular ol 93% meat, 1 egg, maybe 10-15 garlic crackers smooshed, maybe 1 tsp S&P and hmmm, 1/4 cup ketchup. quite tasty! (the topping glaze is 1 part honey to 1 part ketchup -- i forgot to broil for the last bit to get more crunch to the top)

served up with red potatoes quartered and tossed with 3 tbsp olive oil and a packet of ranch dressing mix. baked at 425 for 30 minutes. cannot believe my non potato eating kids loved it. well, one anyway.

Brussels sprouts & baby carrots halved and sauteed with shallots, dash of salt.

VERY tasty dinner - everyone had seconds! :D

Hot Capellini tossed in Conzorzio Basil olive oil, fresh crushed garlic, Syrian Aleppo peppers, Meyer lemon juice and a splash of Balsamic vinegar....stir in pot while still warm to tone down the garlic. I tossed the pasta with fresh torn basil leaves, red tomato, yellow Honey Bunch grape tomatoes, and small pieces of lightly steamed asparagus. Gently toss with fresh ground pepper and Ritrovo Fennel salt (from Volterra website) and garnish with a good Reggiano or Asiago. I drank think with La Ferme Julian-La Cote de Luberon-White Yummy! The kids had Odwalla Orange......

I served this with warm Rosemary French bread and a simple salad of baby arugula and grated Reggiano tossed in a vinaigrette of Meyer lemon, basil olive oil, crushed garlic, pinch of Coleman's dry mustard, a dab of austrian honey, a touch of celery salt and fresh pepper! OMG was this ever great! I ended up mixing the salad right with the pasta in the end! Those are my comfort flavors....today!

Tried a new recipe from the "Best of America's Test Kitchen" magazine that's on newsstands now (Feb). Takes some prep time (soaking beans, chopping veggies) but it's pretty easy (not quick, but easy). Also - calls for some ingredients that our Safeway didn't carry - had to go to an Italian neighborhood store to get pancetta and rosemary. Couldn't find dried "cannellini" beans, but used Safeway's "Small White Beans".
Smells HEAVENLY while cooking!! Tasted great!

whole wheat cous cous and my old standby (it doesn't get old, to me...) zucchini, purple onion and carrot shreds.

no photo and i didn't get to eat any... made it as i ran out the door to a meeting. :/

Pork Tenderloin pan seared till brown...remove pork then pan is deglazed with with 1/2 cup Grade "B" dark maple syrup and chopped rosemary garlic mixture...pork is put back in the pan and finish in oven! Super easy and fast! Turn pork once or twice while baking @ 350 degrees F ≈20 min

Wok seared french green beans with garlic, soy, black pepper and a splash of chickenstock

Green salad with yellow cherry tomato, mushroom, bell pepper, and persian cucumber with homemade ranch dressing~extra garlicky

Rainy weather REALLY calls out for soup or stew. Found this one in a Sunset Soups & Stews cookbook.
Very easy!! Next time I will use no-salt tomatoes and not add salt - plenty salty with the ham.
Great with French bread and maybe a green salad. Kids both out of town - just hubby and me.

10 filo (strudel) leaves [in frozen food section with pie dough]
1/2 lb butter (I use a little less)

FILLING:
1 1/2 lb chopped (not sliced) mushrooms (4-5 c. packed, raw)
1 tsp salt
freshly-grated black pepper
1/2 tsp. ground caraway or dill seed (I used dill)
4 oz cream cheese
4 oz cottage cheese
1/2 c. sour cream
1/2 c. plain yogurt
2 c. fine bread crumbs
1/4 c. freshly chopped parsley
3-4 scallions, minced (include as much of greens as possible)
juice from 1 lemon
1 TBS. poppy seeds

FILLING ASSEMBLY:
Steam mushrooms & drain them, squeezing out as much excess liquid as possible. Cut the cream cheese into the hot mushrooms, tossing until cheese melts. Add rest of filling ingredients. Mix well.

TO ASSEMBLE:
Melt the butter. Lay 1 leaf of filo flat on a wooden surface or counter-top and brush leaf with melted butter. Add another leaf and brush with more butter. (Completely cover leaves.) Continue to stack leaves until you have a pile of 5. Apply 1/2 the filling across the width of the leaves at the bottom of the rectangle. Roll up tightly.Brush top with butter and sprinkle 1 TBS poppy seeds. Using a spatula, transfer to well-buttered baking sheet. Repeat for second roll. Slash each roll into 3rds on the diagonal. Bake 25 minutes at 375 degrees. Serve hot.

NOTE ABOUT WORKING WITH FILO: Filo comes two packs to a box. There are about 20-25 leaves in each pack. Make sure to have the leaves at room temperature before starting. Leave them in the package though so they do not dry out. When pulling them apart the first 2-3 may come off in pieces and then the rest will come apart easily. Discard the broken pieced. It's nice to have two sets of hands on this part of the project.

4-6 servings. This recipe is from the original Moosewood Cookbook.
Serve with fresh steamed asparagus and a salad of field greens.

PHOTOS: I doubled the recipe in the photos.

NUTRITION NOTE: This dish can actually be fairly low in calories if as little butter is used as possible and fat-free sour cream, cream cheese & cottage cheese are used. Filo is only 180 calories for 5 sheets (the amount used in 1 roll).

i had the asian chicken salad. hubb had creamy tomato soup. kids both had chix noodle in a bread bowl. i think they were more excited that it was IN a bread bowl more than anything else. ;)

Cook leeks and onion in olive oil for 4-5 mins until soft. Add the chunks of chicken pieces and cook for another 5 mins. Stir in garlic and white wine and simmer until reduced by two thirds. Add an equal amount of chicken stock and simmer until reduced by half. Add an equal amount of double cream and fresh tarragon. Bring to the boil then simmer for 5 mins until thickened. Season then spoon in to a pie dish. Cover the dish with puff pastry, prick to let out the steam and paint with beaten egg. Cook at 220 centigrade for 45 mins or until the pie crust is puffed and golden

Chicken coated with lightly beaten egg white, then dipped in a mix of crushed corn flakes, flour, salt & pepper. Oven baked at 400 degr. for 40 min on a lightly sprayed cookie sheet (I covered it in foil first).
Great!! The only thing I changed is the amount of salt - you could also add other herbs, garlic powder, etc. to your tastes.

bought a RIDICULOUS amount of stew meat at costco yesterday... so i imagine i'll be posting this dinner again. and again. and again.

crock potted this stew meat all day on low with a bit of olive oil, beef bouillon and Worcestershire sauce. splash of S&P for good measure. hour 2 or 3, i added 1 cut up onion. added cut up celery, onion, potatoes and baby carrots for the last hour or so.

served it up with toooob crescents and everyone was happy happy. so happy, i forgot to take a pic. :/

A very easy and ecconomical, yummy and quick dinner. My hubby and kids loved it!

Ingredients:

1 lb. lean ground beef
garlic powder
onion powder
2 cups water
2 pkgs beef ramen
1 beef ramen seasoning packet
1 beef bouillon cube

Directions:

Brown lean ground beef, added garlic and onion powder to taste.

Pour in water, bring to boil. Add one of packets from beef ramen and one beef bouillon cube. Stir to dissolve.

Break up and add noodles. Cook until noodles are tender and soak up most of broth.

Serve and enjoy!

I cut the recipe in half for 3 people, used dried herbs due to the season, less rosemary due to my not having a whole lot and found the easiest way to crush the allspice was in my clean garlic press. :)


1 cup dry white wine
6 garlic cloves, pressed
1/4 cup olive oil
2 tablespoons coarsely chopped fresh rosemary
1 tablespoon coarsely chopped fresh thyme
8 whole allspice, crushed
2 (12-ounce) pork tenderloins


5 tablespoons Dijon mustard, divided


3/4 cup heavy cream
1/2 cup low-salt chicken broth
2 tablespoons chopped fresh tarragon

PreparationMix wine, garlic, oil, rosemary, thyme, and allspice in large resealable plastic bag. Add pork and turn to coat. Marinate at least 30 minutes and up to 1 hour, turning bag occasionally.

Preheat oven to 375°F. Remove pork from marinade and place on rack on rimmed baking sheet; discard marinade. Spread 3 tablespoons mustard all over pork. Roast until thermometer inserted into thickest part of pork registers 145°F, about 25 minutes. Transfer pork to platter and let stand 10 minutes.

Meanwhile, boil cream, broth, tarragon, and remaining 2 tablespoons mustard in heavy medium saucepan until reduced to 1 cup, whisking occasionally, about 10 minutes. Season sauce to taste with pepper.

Slice pork crosswise into rounds and serve with sauce.

My favorite "roasted" chicken, with "rustic" mashed potatoes (skins on), and chard. (I gotta work on my food photography; the camera phone's focus is too long.)

I buy a package of 2 whole organic chickens at Costco once a month, cut them both into pieces, divide into portions, and freeze them. I find baking them this way much easier than roasting them whole, and just as tasty.

Serves: 2-4.
Prep: 5 minutes.
Cooking: 30 to 45 minutes.

4 pieces bone-in skin on chicken pieces (split breasts, whole legs, thighs, and/or drumsticks)
4 tablespoon unsalted butter, softened
1 tablespoon minced fresh thyme, sage, tarragon, rosemary, or parsley
1 teaspoon grated lemon zest
1/4 teaspoon sea salt
1/4 teaspoon freshly ground black pepper

Adjust an oven rack to the upper-middle position, about 5 inches from the upper heating element; heat the oven to 450F.
Pat the chicken dry with paper towels. Mix 3 tablespoons of the softened butter with the herbs, lemon zest, salt, and pepper. Rub the mixture underneath the skin of the chicken. Melt the remaining tablespoon of butter.
Arrange chicken pieces, skin-side up, in a 2-inch deep pan just large enough that the pieces fit comfortably without touching each other or the sides of the pan. Drizzle with melted butter and season with salt and pepper.
Roast until the breasts register 160F or the legs, thighs, and drumsticks register 175F on an instant-read thermometer. This should take about 30 minutes for thighs and drumsticks, and 45 minutes for whole legs or split breasts. When the chicken is done the flesh will appear cooked throughout and the juices will run clear.

The soup is mishmash because I used leftover crockpot stew with eggplant, beef, tomatoes, and aromatics and spices in it, broccoli, corn, and spinach from the fridge and some chicken stock. I added some basil and rosemary to the original herbs mix.

The biscuits looked like golden cookies and were made with agave syrup, coco flour, fake butter. DD currently on a no wheat no dairy diet.

This is one of our healthy favorites.

*Cook whole Wheat Spaghetti according to directions.

*Heat a med. pan with 2 or 3 T olive oil
*Brown 3 or 4 med. sized chicken breasts, non injected if possible, season with salt and pepper
*Add 6 chopped roma tomatoes AND
Can of cubed tomatoes with garlic
A generous splash of red wine
A smaller splash of balsamico vinegar
*Let bubble a while then add to taste:
a nice handful of chopped basil (or out of a tube or dried if you don't have fresh)
a clove or two of chopped garlic
more salt and pepper
tomato paste to desired sauce thickness

Let bubble a while longer until you are sure chicken is cooked through (maybe 10 min. depending on thickness) and then serve over the pasta.

ok, a few edits... this requires really tasty fresh tomatoes or it isn't so great AND I forgot that you need to add a little sugar to the sauce as well. Finally if you want a stronger winey taste to the chicken, braise it in the wine for a bit rather than browning before adding the rest of the ingredients.

Started with sake followed by an order of Arizona Summer Rolls, two pieces of maguro, two pieces of toro, and a Green Turtle Roll. Finished the meal with red bean mochi and fried wonton sticks.

Arizona Summer Roll: tuna tempura and yellowtail with cilantro, green pepper, and avocado. Tying it all together is chili oil, magical spicy sauce, and a bit of lime juice. Served with lime slices on the side.

Green Turtle Roll: eel, shrimp, cucumber, wasabi, tempura for a bit of crunch, wasabi tobiko for the turtle shell, and eel sauce to tie everything together in a dessert-like finish. And the head of the turtle? One big ball of wasabi with a shrimp tail for a tongue, and mayo and two dots of roe for eyes. Finally, the maki sculpture is complete with small green edible leaves positioned like flippers on the plate.

Lean burger patties - aka Tartartjes by Alice February 7, 2009
Very typical Dutch dinner, but with my own American style mixed in there.

Tartartjes - very lean hamburger patties
Oven Roasted Potatoes
Applesauce
Witloaf salad

For Tartartjes:
Heat med. skillet with a bit of oil on high flame, add Tartartjes to pan
Sprinkle with salt, pepper, paprika powder, a few drops worstershire, a few drops tabasco
let cook 1 min then turn, sprinkle other side
let cook 1 more min, then turn
Let cook 10 mins or so
Add a bit of red wine to the pan and move the patties around in it, turn again (this smells really good!)
Let cook 10 more mins or until desired doneness Tartartjes are usually such nice lean beef that you can eat them still very pink inside.

For oven roasted potatoes:
Heat oven to 400f/200c turn on fan if you have it
Dice potatoes in 1-2" dice, peel them if you prefer
In a 9x13 roasting pan, cover the bottom with olive oil
add potato pieces
sprinkle with salt, pepper and your favorite bbq rub (I used penzeys english rib rub)
stir it all up well
roast in the oven for 20 or 30 minutes until nice and brown and crisp

Witlof is a Dutch vegetable that is kind of a soft bitter, lettuce like cabbage... definitely a more grown up taste. You could substitute chopped cabbage and grated carrots (ala cole slaw) or sliced cucumber with this dressing.

If you are using witlof, cut out the heart (it is more bitter than your ex... believe me) and dice in 1/2 inch pieces.
Dressing:
2 T. mayonaise
3 T. cole slaw dressing
1/2 t. paprika powder
1/2 t. sugar
1 t. balsamico vinegar
salt and pepper to taste

pour dressing over witlof and stir, serve cold.

Applesauce... open the jar, spoon it out... let your honey lick the spoon. :)
 
Chicken Cacciatore, Part 2: Re-using the sauce by Judy February 7, 2009
I took the leftover sauce from the Chicken Cacciatore I made, added a little more wine, some sliced zucchini and some frozen Trader Joes Turkey Meatballs (12), simmered for 20 minutes and served over brown rice.

Notes:
Of course, this depends on how much sauce you may have had left from eating the chicken. Always, when eating a sauce that chicken was cooked in, be careful to refrigerate and reheat properly. Also be careful of any small bones that may have separated from the cut chicken.

Bought some thin pork filets, and plan on breading them and sauteing in a bit of olive oil. No deep frying 'round these parts. I'm going to serve them with slices of lemon from the backyard, and potatoes mashed with sea salt, stock, sliced green onion and olive oil. Oh, and some beautiful green Dino Kale from yesterday's farmer's market.

Loosely based on this recipe from the bbc. http://www.bbc.co.uk/food/recipes/database/beefoni onandpotatopa_77606.shtml I made small round individual pies instead of one big one and used frozen pie crust dough (which was a little heavy for my taste, will try with puff pastry instead next time). Added frozen peas to the mixture to make a one dish meal. Very tasty, but needs tweaking. Think I will add more seasoning to the meat. I'm sure I'll make it again

Foster Farms makes a smoked turkey breast that is fab! i just sliced it up and warmed it in foil in the oven. (pkg says you can use it cold, though - it's fully cooked!)

Served it up with some cauliflower and broccoli i cooked in chicken broth.

Mash potatoes and side salad (kids had leftover rice). super easy dinner and surprisingly good!

Healthy if cooked with my changes

Chicken Cacciatore
Salad
French bread

2 cut up fryer chickens (I used 1 cut up chicken)
1 c. minced onion (I cut mine bigger)
4 minced, peeled cloves of garlic (I used 2)
1 can tomato sauce (I used no-salt marinara)
Salt - recipe called for 3 3/4 tsp - I think I only used 1/2 tsp.
1/2 tsp ground allspice
1/2 tsp thyme
6 Tbsp salad oil (I used 2)
3/4 c. minced green pepper (I cut mine bigger)
3 1/2 c tomatoes (I used 1 can of San Marzano tomatoes, cut up)
1/2 cup Chianti
1/2 tsp pepper
2 bay leaves
Dash cayenne pepper

Fry chicken in oil til brown. Remove chicken from pan. (I used my Calphalon oval dutch oven)
Add all other ingredients. Mix thoroughly. Add chicken. Simmer uncovered 30 - 40 min. Serve in the sauce with french bread or over a wide no-yolk pasta

Dumplings:

2 cups flour
1/2 cup shortening ( 1/2 stick crisco)
1/2 tsp. salt
1 Tblsp. oregano
1 egg yolk
1/4 cup milk

Mix egg yolk and milk together. In a kitchen aid, add all ingredients together and mix until a ball forms ( more milk might be needed). I use the paddle attachment for this.

Roll the ball out thin, about 1/4", then cut into squares. I usually work with half a ball at a time. If your squares are a little thicker that is ok, it will just take a little longer to cook no problem.

NOTE: the dough will be sticky so flour your board and rolling pin.

Chicken:

Preheat oven to 350 degrees.

I use leg quarters ( leg and thigh attached) but you can use whatever you like.

Season with salt and pepper and brown chicken in olive oil.
Remove chicken and drain oil.
Add 1 large chopped onion and 4 whole garlic cloves and season with salt and pepper, if you like garlic add more.
Saute onion and garlic until browned.
Return chicken to pot.
Add chicken stock ( enough to cover chicken about 2 large Swanson cans).
Cover pot and place in oven.
Cook for 1 hour.
Take out of oven and add dumplings.
Cook for another 30 minutes.
Eat a dumpling to see if dumplings are done. If they are not done cook another 15 minutes.

I usually cook this in my 9 and 1/2 quart oval Le Cruset. I can fit 5 or 6 leg quarters in it. I have also used legs and thighs separated. This may look like a long recipe but it is really easy.

So delicious and a great way to use leftover roast chicken.

Sauteed some chopped onions, garlic, carrots, broccoli, shredded chicken and bananas in red thai curry paste with chili-infused olive oil. Added a can of light coconut milk and thinned it out with some homemade chicken stock.

I served it with a bed of hot, fluffy basmati rice (but not before lining the bowl with a generous helping of raw spinach...I like to sneak in the greens where I can :)

(Sorry, I didn't deem it photo-worthy! But it was tasty)

I took one of my favorites, Pasta Carbonara, and made substitutions for the major ingredients to invent a delicious new pasta dish!

Ingredients:
Boneless, skinless chicken breast (i/o bacon)
Goat gouda (i/o parm) - would have been better if it had been sharper
Lemon juice & zest, fresh parsley, garlic, salt & pepper
Egg
Bowtie pasta

Served with Rosemary Roasted Brussels Sprouts

Tiny burger joint (isn't that the best kind) in West Seattle. Imagine: 2 tables and a teensy counter, line out the door, phone ringing off the hook. 6 ounce burgers made of chuck, ground fresh daily on premises, for around $5!

Last night's dinner:
* No. 11 - mama lil's spicy goat horn peppers, smoky chipotle mayo, iceberg lettuce, and a blend of jack and smoked cheese
* Half-n-half onion rings / fries - they're BOTH so good
* Waialua Soda - Mango flavor

Overview:

Fresh veal escalope breaded the way I learned from my Romanian friends. Flour, then egg, then flour again. In all the flour, egg, and veal itself I use:

-Salt n' Peppa
-Cimbru (Don't know it in English)
-Cayenne Pepper
-And lots of love :)

Opinion:

One of my favorite and best dishes. I've yet to have a better one in restaurents. It seems overly simple, but getting the measurements right took me awhile. I even learned how to taste the flour :).

Overview:

Roasted Pork Loin from the local butcher with some gravy. Some corn, and spinach salad as a garnish.

Opinion:

Pretty decent, but definitely should've brined the pork a little bit before cooking.

Opinion:
It was alright, ended up a little dry, so I would be worried about over cooking it. It literally can be over cooked in the matter of minutes.

i'm lame... i don't do the full fledge lamb. i just can't. it's a mental thing, i'm sure.

FABULOUS beef gyro at a local greek place. they served it with a yummmmmmy rice pilaf and vinegary potatoes and veg. SUPER delish.

we started with the hummus and pita... crazy good but i'll be reeking of garlic for the next week.

ended with a wedge of baklava. Hooooopah! :D
