| Super Cheesy Chicken Enchiladas February 26, 2008 |
4 skinless, boneless chicken breast halves
1/4 cup olive oil
1 onion, chopped
1 tablespoon dried parsley
1/2 teaspoon dried oregano
1/2 teaspoon ground black pepper
1/2 teaspoon salt (optional)
1/8 cup water
1 dash chipoltle spice
1 chopped green bell pepper
12 clove garlic, minced
8 (10 inch) flour tortillas
1 can enchilada sauce
Tons of shredded cheese, whatever you like and however much you want.
DIRECTIONS
Preheat oven to 350 degrees F.
1. In a large, non-stick skillet over medium heat, cook chicken in the oil until no longer pink and juices run clear. Drain excess fat.
2. With a fork flake the chicken and put back into skillet.
3. Add the onion, garlic cloves and spices. Cook until onion is translucent.
4. Add 3/4 of the can of enchilada sauce and mix well. Put in cheese (reserve about a cup of the mix for the top) and mix well until cheese is completely melted and ingredients are combined.
5. Spoon even amounts of the mixture into your flour tortillas and roll up.
6. Spray a large casserole dish with non-stick spray and place your tortillas seam down touching each other.
7. Cover with remaining enchilada sauce and cheese.
8. Bake in oven about 20 minutes.
Serve with sour cream, guacamole, salsa, rice, whatever! Yummy! We had it with a can of Mexicorn and rice. I also made oven roasted garlic and onion potatoes. |

| Chicken Pot Pie February 26, 2008 |
INGREDIENTS FOR FILLING:
1 medium yellow onion diced
1 bunch fresh chopped broccoli
2 cloves fresh garlic minced
2 ribs celery diced
4 peeled carrots diced
1 carton diced fresh mushrooms
1/2 cup shallots diced
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 can evaporated milk (you can use more if you like it thinner)
1/2 cup marsala wine
1/4 to 1/2 cup olive oil (you can use more if necessary to keep the onions from burning)
1/2 tsp rosemary
1/2 tsp basil
1 tsp parsley
salt and pepper to taste
store bought refridgerated or homemade pie crust
2 eggs
INSTRUCTIONS:
1. Heat olive oil in skillet on medium heat.
2. Add marsala wine and seasonings, immediatly after add onions and garlic.
3. Cook until onion is translucent, turn burner to medium low.
4. Add cream of chicken, cream of mushroom and evaporated milk. Stir until smooth consistency.
5. Add all vegetables.
6. Simmer until vegetables are soft.
7. While vegetables simmer, spray non-stick cooking spray into glass casserole dish.
8. Place layer of pie crust on bottom of casserole dish.
9. Dump all of your vegetables into the dish and even out.
10.Place layer of pie crust over vegetables and tuck in edges slightly with a spatula.
11.Brush top pie crust with egg.
Cook on 375F for about 30 minutes or until the top pie crust is evenly brown.
I served it with red bud mashed potatoes and homemade biscuits. Absolutely yummy. |

| Souvlaki gyros with Tzatziki Sauce by Jennifer February 25, 2008 |
| This recipe is actually for grilled kabobs, but I adapted it to make Greek-style gyros and it was awesome. Simply throw all of the ingredients and marinade into a hot skillet, allow to boil up and reduce heat to simmer with lid. You will need a fairly good size skillet. Takes about 30 minutes or so for the sauce to boil down and thicken up nicely but it is SO WORTH THE WAIT. Use pita bread and slather it with the souvlaki, cheese if you so desire, then dip or dress with the Tzatziki sauce. Soooooooo good! My kids LOVED it and so did the grown-ups. Just wanted to add, my husband HATES cucumbers and I am not too fond of them, but the tzatziki sauce is wonderful with the gyro. Trust me!INGREDIENTS FOR SOUVLAKI1 lemon, juiced 1/4 cup olive oil 1/4 cup soy sauce 1 teaspoon dried oregano 3 cloves garlic, crushed 4 pounds pork tenderloin, cut into 1 inch cubes 2 medium yellow onions, cut into 1 inch pieces 2 green bell peppers, cut into 1 inch pieces skewers DIRECTIONSIn a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 2 to 3 hours. Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers. Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking. INGREDIENTS FOR TZATZIKI SAUCE2 (8 ounce) containers plain yogurt 2 cucumbers - peeled, seeded and diced 2 tablespoons olive oil 1/2 lemon, juiced salt and pepper to taste 1 tablespoon chopped fresh dill 3 cloves garlic, peeled |

| Curried Coconut Chicken and Rice February 25, 2008 |
Absolutely delicious, totally easy, even the girls scarfed it down. We will be adding this to the rotation!
INGREDIENTS
2 pounds boneless skinless chicken breasts, cut into 1/2-inch chunks
1 teaspoon salt and pepper, or to taste
1 1/2 tablespoons vegetable oil
2 tablespoons curry powder
1/2 onion, thinly sliced
2 cloves garlic, crushed
1 (14 ounce) can coconut milk
1 (14.5 ounce) can stewed, diced tomatoes
1 (8 ounce) can tomato sauce
3 tablespoons sugar
DIRECTIONS
Season chicken pieces with salt and pepper.
Heat oil and curry powder in a large skillet over medium-high heat for two minutes. Stir in onions and garlic, and cook 1 minute more. Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.
Pour coconut milk, tomatoes, tomato sauce, and sugar into the pan, and stir to combine. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes.

| I'm in Thaliand and i had "chicken and cashew nuts" with steamed rice. Not the best i['ve had which usually comes with a sticky reddish sauce, from what i can tell it was chicken, garlic, spring onions and soy sauce with a few toasted cashews thrown in, nice enough but not a patch on the red one i like. |

| A simple meal all done in the processor, followed by pan-frying. 500g of white fish fillets (I used swordfish steaks), 1 egg, red chillies, sweet chilli sauce, coriander, green beans, cornflour, fish sauce, red curry paste, spring onions and turn it on, baby!! (exact ingredients depend upon individual taste, but small quantities of each is appropriate). |

okay so I took 1000grams of lean burger, browned it, drained it, then dumped it in two point five large tins of tomator sorce with a can of full mushrooms and a can of stems and pieces with some cut up celery and then added some sprinkles of oregano, parsley flakes, salt, pepper, and that dried up union stuff ingredient. I could have been more liberal with the spices.
Anyway, it's pretty good. My next attempt will be FRESH ingredients and probably much more spices with a clove of garlic. So we'll see. |

| Rotini with Roasted Garlic Pasta Sauce February 13, 2008 |
| I roasted 4 heads of garlic (used 3 in the recipe and snacked on the other one) and added it to a sauteed onion and garlic clove, some balsamic vinegar, 2 large (28 oz) cans of whole, plum tomatoes, tomato paste, some hot sauce, crushed red pepper flakes and herbs (oregano and basil)...plus salt and pepper to taste, of course. I usually add a bit of brown sugar to my pasta sauce, but this is one I got from Recipezaar, so wanted to follow it to the letter the first time and try it as written. We had a side caesar salad with this and really enjoyed it! If anyone is interested I'll post the recipe number from the website so you can try it out yourself. |

olive oil, 1 onion, 2 cloves garlic, 1lb ground beef, 3 stalks celery, 2 carrots, 1 large can of tomatoes diced, 1 or 2 normal sized can of beans (black, red or chick peas), ~ 0.5 Lbs kale, 1 tbs. chili powder, 1 tbs ceyen pepper, 4 drops daves insanity sauce (a can of drained corn adds good texture too)
chop every thing, saute in order listed, adding the spices with the meat, then add tomatoes, beans and kale, simmer until kale is done, serve with rice or bread |

| I made couscous with vegetable broth, then tossed that into a bowl with some veggies (chopped tomato, scallions, cucumber, red bell pepper and shredded carrot) and chick peas. A light vinaigrette of olive oil, red wine vinegar, lemon juice, 2 garlic cloves, crushed red pepper flakes, salt and pepper was poured over everything in the bowl and tossed to coat. Very light and refreshing...should taste even better tomorrow once the flavours have a chance to meld! |
