you know you've seen "A Christmas Story" when you can't say meatloaf without saying, 'meatloaf...smeatloaf... double beetloaf... i hate meatloaf'

1 lb ground beef
seasoned breadcrumbs (i've been making my own lately... with store bought 'stuffing croutons', garlic crackers and assorted seasonings)
1 egg
1/2 parmesan
packet of lipton soup mix (onion kind)

mixed it all and slathered it with a 1 part honey/1 part ketchup 'glaze' -- cooked at 400 for 45 minutes. this depends of course on how thick you shape the loaf.

served with sliced Brussels sprouts sauteed with purple onion and olive oil and a dash of S&P and Worcestershire sauce -- thanks for the tip, lindsey! (although, i did forget the mustard!)

and... stouffer's mac and cheese. i just have been craving GOOD mac and cheese allllllll week... so - yea. not the most healthy thing - but so damn good!

meatloaf was a bit heavy... i'm not much of a measurer... i tend to guestimate and throw things in... so i'm guessing next time i'll try and do better when it comes to meatloaf. but the kids ate it, so i guess it wasn't too bad! ;)

Great take on the classic! My kids love it, and the sorority/fraternity friends staying with us loved it too! Serve with a simple green salad - it already has so much stuff in it!!

Ingredients

1 Whole-wheat pita bread
1/4 cup Grated mozzarella cheese
2 tbsp. Pizza or tomato sauce
Veggies of choice: mushrooms, bell pepper, onion, olives, artichoke hearts, etc.

Preparation

1. Preheat the oven or toaster oven to 350 degrees. Split the pita bread halfway around the edge and spoon in the cheese, tomato sauce, and any toppings. Wrap the pita in aluminum foil and bake for 7 to 10 minutes or until the cheese melts. Makes 1 serving.

The shrimp recipe was taken from Epicurious.com called Spicy Baked Shrimp, which I've pasted below.

* 1/2 cup olive oil
* 2 tablespoons Cajun or Creole seasoning
* 2 tablespoons fresh lemon juice
* 2 tablespoons chopped fresh parsley
* 1 tablespoon honey
* 1 tablespoon soy sauce
* Pinch of cayenne pepper
* 1 pound uncooked large shrimp, shelled, deveined

* Lemon wedges
* French bread

The french bread was homemade, and took about 2 hours to make in total.

I forgot to take a picture of the meal, so I'll have to do that next time!

Beans in the slow cooker is like magic. Pork belly, eggplant, Mirepoix, dried black-eyed beans, tomato, garam masala, garlic, and about 10hours to turn into a velvety, unctuous dinner. Even better reheated for lunch
 
Bistro Pork Saute (Weight Watchers) by Lindsey January 29, 2009
4 (5-ounce) bonless pork loin chops
1/2 tsp salt
freshly ground pepper
1 pound fresh brussels sprouts, thiny sliced
1 1/4 cups chicken broth
1 tbsp white wine worcestershire sauce
1 tbsp dijon mustard
1/2 tsp ground allspice

Spray a large non-stick skillet with nonstick spray and set over medium-high heat. Season the pork chops iwth salt and pepper, then place in the skillet and cook until browned, 1-2 minutes each side. Transfer the chops to a plate.

Add the brussels sprouts and broth to the skillet; bring to a boil, scraping up any browned bits from the bottom of the pan. Stir in the Worcestershire sauce, mustard, and allspice.

Return the pork and any accumulated juices to the skillet. Reduce the heat, cover, and simmer until the pork is cooked through, about 12 min.

Transfer the pork chops to 4 plates. Raise the heat to high and boil the sauce until slightly thickened, about 2 min. Spoon the sauce over the chops.

Serving: 1 Chop with 3/4 cup brussels sprouts and sauce.

super easy recipe... i forgot how good it is!

1/2 cup mayo -- yea, i use full fat mayo - i so don't see the pt of reduced fat mayo. mayo *IS* fat!!!!
1/4 parmesan
1/2 tsp garlic powder (i hardly ever measure, so i'm guesstimating)
1/2 tsp ground pepper

spread mixture over chix breasts and cover with bread crumbs. bake at 400 for 25 minutes -- depending on size/thickness of the breasts.

served this up with yellow rice and my favorite zucchini with shallots and shredded carrots. kids asked for seconds on the chix! :D

marinated boneless chicken (sliced in to long strips) in a bag with pineapple juice and teriyaki sauce allllll day! popped the whole bag in the oven at 400 for 25 minutes.

whilst that was cooking away, made jasmine rice. put some more teriyaki in a fry pan and heated up some pineapple and tossed in the done chicken that i cut into cubes. at the end, i popped in half a bag of sugar snap peas to warm through.

plated it all with some diced green onions and sesame seeds. i know i make this a lot - but this time it was special for OBAMA! :D

we even had special OBAMA cookies for dessert! our O-Cookies. ;)

Sent husband to the store and he came back with pork chops, which I have cooked approx. 5 times in my entire life. Got the recipe from the internet, but didn't really follow it that closely since I didn't have some of the ingredients and had to substitute (i.e. canned mandarin oranges instead of pineapple, apple cider vinegar instead of white, etc.). Ended up adding brown sugar and a splash of orange juice too because I was worried it wouldn't be sweet enough. End result: nice, mild flavor; interesting diversion from our usual fare. Husband said he would have it again.

Served with garlic new potatoes and salad.
 
Beef Stroganoff by Marc January 17, 2009
Beef Strogenoff

8 oz. bacon chopped
1 Lg. onion chopped
1 Lb. ground beef 90/10 (fat content)
1 can cream of mushroom
8 oz. sour cream
1 can milk (use cream of mushroom can) more if needed.
1 package egg noodles

Render bacon over medium heat. Remove bacon from pan and add onion to pan with bacon grease. Saute onion until soft. Remove onion from pan and add ground beef. Brown beef. Return bacon and onions to beef and add cream of mushroom and milk. Mix well and bring to a simmer. Add sour cream and bring back to a simmer then turn off heat.

Top cooked egg noodles with beef mixture.

Busy busy days lately. This meal is a great emergency standby.
crisp-fried corn tortillas, cut into strips and salted.
Red peppers, chili, spring onions, coriander, tomato sauted in the same pan.
Eggs, scrambled with a little milk, thrown in with the vegetables.
cooked until still soft, topped with crispy tortilla strips.
5mins to cook, 2 mins to eat :)

i used canned pineapple chunks and omitted the jalapenos. but it was absolutely superb!!!! very very good - whole family had seconds!

simple spinach salad with shredded carrots, sesame seeds and a orange sesame dressing. cannot believe it, but the kids had seconds of the salad!

This is a combination of two recipes from allrecipes.com. One had the best meatballs and the other had the best gravy, so like many other users, I combined the two. Soooo yummy!

INGREDIENTS

6 tablespoons butter or margarine, divided
1 onion, chopped
1 cup dried bread crumbs
1 cup evaporated milk, divided
1 1/2 pounds ground beef
1 egg, beaten
1 teaspoon salt
1/4 teaspoon ground black pepper
1 pinch dried parsley
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
1 (12 fluid ounce) can evaporated milk

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).

Melt 3 tablespoons butter or margarine in a large skillet over medium heat. Add the onion and saute for 5 to 10 minutes, or until tender.


In a separate medium bowl, combine the bread crumbs with 2 tablespoons of evaporated milk and stir, allowing the crumbs to absorb the milk. Add the ground beef, onion, egg, salt, ground black pepper and parsley to taste. Mix well and form into golf ball sized meatballs.

Heat remaining butter or margarine in the same skillet over medium to medium high heat and add the meatballs. Carefully shake the skillet to turn the meatballs, as needed. Saute for 10 to 15 minutes, or until meatballs are browned on all sides.

Place meatballs in a lightly greased 2 quart casserole dish. In a separate medium bowl, combine the soups with the evaporated milk, stirring until smooth. Pour over the meatballs.

Bake uncovered at 350 degrees F (175 degrees C) for another 40 minutes.

A fabulous meatloaf - the best I've had! This is a top recipe at Allrecipes.com. I made this one with half beef, half lamb from a local butcher. I cooked it 2 weeks ago but it keeps amazingly well in the freezer.

I will be serving this with roasted root veggies and spinach.

My first issue of 'Everyday Food' arrived last week - I found a simple recipe for a good steak sandwich, so we had to try it out tonight.
First you pierce your top round steak (we bought an inside cut...not sure what the difference is between an inside & outside cut, but if anyone knows please do tell!) and then rub it with Worcestershire sauce; season with s & p and marinate for 15 min.
Slice half a red onion thinly and marinate that in 6 Tbsp of white wine vinegar; season with s & p.
Cook your steak (we like medium doneness), transfer to a plate to rest for 10 min, then thinly slice against the grain.
While the steak was resting I tossed a red-leaf lettuce salad (baby red-leaf lettuce, pine nuts, dried cranberries and a few croutons) with a balsamic vinaigrette.
Assembly: slice your bread (we used ciabatta...something grainy and/or rustic is perfect), toast it lightly, then spread a little Dijon mustard on half; top with the sliced steak, 'pickled' onions and a few leaves of red-leaf lettuce...mmmmmmmmmmm-mmmmmmmmmm good!

It resulted in health factor 1.3 but what the hell, I can't be healthy all the time -- the system needs steak!

What did I have for dinner? Steak & unions & mushrooms with delicious broccoli and baked potato on the side. Would have been better if was a prime cut, however, the HP sauce was called in to complete the mission and the taste buds were suitable satiated and the tummy made happy.

Gotta go work this off now at the gym..well, that'll be tomorrow..with something for dinner less heart-attacky.. *sigh*. Oh well, if you're gonna have the steak, do it right & I did it right. =cD

boiled up left over mixed noodles from multiple boxes. ziti, wagonwheels.. made meatballs (ala laura's recipe) and must have had the heat too high because half of them disintegrated into the sauce. grated a zucchini into the mixture (don't tell the kids!)

mixed the sauce and the noodles and served with warm french bread toasted with garlic butter. husband had a salad.

I'd planned san chow boy; but a trip to the all-you-can-eat gelato shop put paid to that idea. Something savoury was needed to feed the unexpected horde.

Chicken mince, doctored with bread crumbs and assorted spices, cooked in bacon, onion and tomato passata while the pasta boiled.

Self serve, even after a belly full of icecream it went down well.

i hesitate to even post this... but i am making an effort to support the dinner time app! they can't all be winners, right?

tilapia in the oven (for too long, at too high, with too much seasonings) - miserable attempt at crabcakes (will definitely approve upon) - jasmine rice (the one thing that went right!) - steamed broccoli and baby carrots thrown in for some color.

a less than stellar meal made up for with an apple pie that i cooked earlier. no no.. i didn't make it - the good people at marie calendar's did. i just cooked it.

I've never been so excited about a soup before. Very filling and such a great blend of tastes - will definitely make this again! Substituted some of the heavier ingredients for lower-fat alternatives (e.g. light cream, reduced fat cheese, turkey bacon ...) to make it "healthier," but overall, yummy and nutritious.

- notifications fixed: comment, thread updated, and chef point notifications should now be working again.
- help updated: it now includes images of the profile wall tab & boxes tab views (some of your dinners were captured in the screenshot - if you want me to remove 'em, please let me know), ah but they look great. :D

1 French bread baguette, cut lengthwise in half and sliced into pieces
~ 1/2 lb lump crabmeat
1/4 cup chopped scallions
1/2 cup shredded mozzarella
2 tbsp minced garlic
1/4 cup mayo
1 tbsp Dijon mustard

Pulse crabmeat in food processor until well-ground. Mix in bowl with other ingredients. Spread onto bread and broil in oven until bread is lightly browned (~ 5 minutes).

Served with homemade potato salad (first time I've ever made it, was surprisingly good).

Verdict: I should have followed the recipe's direction (got it from the Kraft website, changed it a little) to spread a THIN layer of the crab mixture. I had so much left that I thought it would be okay to just lump it on, but the taste was overpowering. Apparently less is more in this case.

Hubby's favorite dish. My pared-down, quicker version of the classic, but just as flavorful.

2 skinless boneless chicken breasts, butterflied, cut in half and pounded flat
Italian breadcrumbs
1 egg
~ 4 cups mushrooms, sliced
1 cup Marsala (or even a cooking sherry would work)
2 tbsp flour
1/2 cup chopped fresh parsley
garlic powder
couple pats of butter/margarine

Roll the chicken in egg, then breadcrumbs. Sprinkle both sides with garlic powder. Brown in skillet with oil, medium/high heat. Set aside.

In a separate pan, saute mushrooms in butter. Set aside.

Whisk flour with a splash of cold water (to prevent lumps) in a small bowl until thoroughly mixed. Add Marsala and stir. Pour mixture into first skillet (where the chicken was cooked). Add parsley and heat to medium until sauce thickens.

Re-add the cooked chicken. Pour mushrooms on top. Reduce heat to low, cover, and let simmer 5-10 minutes.

Served with garlic mashed potatoes and a green salad.

Crockpot Pot Roast by Heather January 6, 2009
Seasoned (S&P) and braised a 3 lb chuck roast. Popped it in the slow cooker with some baby carrots, sliced yellow onion, and 1 packet of Lipton dry onion soup mix (and about a 1/4 cup of water). Cooked on low for 6 hours. Savory and tender!

Served with a "Greek" salad (our version is a Spring mix with chopped scallions, sliced red onion, tomatoes, cucumber, radishes, feta and kalamata olives, dressed with EVOO and red wine vinegar) and store-bought pierogies.

Save the drippings from the roast and reheat with leftovers on stovetop for flavor and juiciness.
 
Slow Roasted Pork by Lara January 5, 2009
soooooooooo good. slow cooked in the oven at 250 all day. okay, 9-4pm. after that i cranked it to 350 for about 30 minutes. just a plain old pork roast, marinated overnight in about 1/2 cup olive oil, salt, white pepper. popped that in a dish and added maybe 1 and a 1/2 cups of cold water and sprinkled the top with a packet of onion mix.

sliced up an onion and added to the cooking about half way through. truly made the house smell heavenly.

served it up with orange carrots and um... hash brown patties. must explain... it's the only potato the kids will eat. no tater tots, no baked potatoes, no mash. sad, but true. so there it is...

everyone had seconds! :-D

Spanish chicken? Apologies to anyone Spanish.....
Lots of mouths to feed - and I'd sourced a lovely Inglewood chook whose plump breasts and fleshy thighs deserved more than the standard roast treatment.
I made a base of slow-cooked onion, celery, red peppers and carrot, and lots of garlic (about 6 cloves).
Added 2 chorizo sausages, the chicken (now invitingly bite sized), chickpeas and diced tomatoes.
Cooked for 50mins on the stovetop, sprinkled with parsley and basil before serving on cheesy polenta.

2 cans salmon
1 red bell pepper, diced
1 white onion, diced (if desired)
dash or two garlic powder
2 cups Italian bread crumbs (reserve 1 cup)
1 beaten egg

mix all ingredients, form into patties, roll in reserved bread crumbs
heat oil in skillet on medium, cook until lightly browned

delicious with asparagus and risotto/cous cous on the side

my attempt and improvisation of a friend's recipe for chicken squares. when my crescent rolls fell completely apart after taking them out of the toooob, i improvised.

basically: 3 tbsp cream cheese mixed with 1 tbsp butter, mixed in 2 diced scallions. cut up 2 chicken breasts VERY small and cooked on stovetop with 2 tbsp olive oil and chicken seasonings.

ended up using the pitiful crescent biscuits in muffin cups and filled up with the chicken and then spooned over the creamy mixture. topped that with crushed up croutons and a dab a butter. have i mentioned i love butter? no? well, i do. but this was very sparing.

cooked this for maybe 15 minutes and plated with a simple spinach salad. kids deemed them, 'chicken crowns' after much consternation. throw away names were chicken presents, chicken stars and chicken biscuits. :p

my typical teriyaki noodles, bok choy, celery, green onions, shredded carrots, broccoli, snap peas, bean sprouts dish... this time oven roasted the salmon with a seafood rub. paired up with yummy egg rolls, egg drop soup and finished with fortune cookies! :D

Summertime gardening - what to do with the pile of pruned rosemary branches?
Kebabs - I stripped the leaves from the sticks leaving about 2cm at the tip, and threaded them through cubes of chicken breast, zucchini and red capsicum. Dressed with honey, lime, lots of garlic, S&P and cooked in the oven until tender and golden. These smell heavenly while cooking!
Served with potato bake - slices of waxy potato, skin and all, drenched in a cream and yoghurt bath, and topped with a sprinkling of cheese - baked until bubbly and creamy tenderness.
Also accompanied by a salad of rocket, tomatoes and red onion.
Watermelon cubes for dessert.
