It's raining here in Brisbane - not a great combination with a thin piece of plastic covering your roof. So all here feeling somewhat blaah with the rain seeping along walls that should be keeping out the elements.
Rice, white - Serotonin promoting, comforting carbs. Cooked with little seasoning and some broccoli, green lentils and slow-cooked red onions. Accompanied with fresh bread spread with avocado. |

Mr teen flexed his cooking prowess tonight - we had cumin and rosemary marinated lamb, served with a fine pasta salad (mushrooms and silver beet with haloumi cheese tossed through the pasta) and lovely freshly-made tabouleh.
Oh - and crepes for dessert! The batter was made and waiting in the fridge before I even arrived home. Now that is planning. Crepes have become very popular in our house since visiting friends in England. Ask an English person to say crepe. Ask them again! Now tell me that there isn't a poo joke waiting to be told there.

| Another treat from the master teen chef. Chicken and mushroom risotto - but pulled up from the banal by an incredible herbed oil infusion (lemon, garlic, rosemary, parsley) added at the last minute. I am so impressed with the skills of my boy - a tender, creamy risotto packed with flavour and expertly put together. |

Friends and neighbours to dinner - a celebration of old friends and new ones post storm-bonding exercise.
I took a leg of lamb, boned, and spiked it with anchovy and garlic paste. Cooked slowly with cherry tomatoes, diced sweet potato and thick slices of onion for flavour. Bay from Bills back yard.
Served with an eggplant, lentil, cumin and yoghurt salad, slightly hail-mangled greens and Kipfler potatoes, roasted in their jackets, salt encrusted.
Lots of wine - SA Pinot noir, NZ pinot gris and Hunter shiraz.
Strawberries and icecream to finish. |

Weekend breakfast:
Mix in a large bowl dry ingredients
2 cups self-raising flour
1/2 cup plain flour
1 tspn baking powder
100g raw macadamia nuts
3/4 cup brown sugar - packed
In a separate bowl combine
1 diced green apple (peeled)
1 tablespoon honey
1 egg
90g butter
Mix wet ingredients into dry, until just mixed. Spoon into large muffin cups, sprinkle tops with cinnamon sugar and Bake 180C for 20min. |

I made this recipe on Wednesday (11/12). I had collards sitting in the fridge from last week's CSA share, and some new greens from this week, so I needed a recipe that would use up a lot of greens!
I pretty much followed the recipe, although I added some mustard greens to the collards, threw in some red pepper and some balsamic vinegar in addition to the cider vinegar into the greens. I also didn't have any parsley and used dried thyme in the cakes. I thought the cakes were a bit dry so I put a bit of lemon juice and about 1 tsp of oil in with the mix before forming the patties. It was delicious with some cornbread (just a mix from Trader Joe's)

I got broccoli rabe from the CSA and had a couple turkey hot Italian sausages in the freezer so I made this recipe last night (kind of): http://www.epicurious.com/recipes/food/views/Itali an-Sausages-with-Broccoli-Rabe-and-Polenta-103436
I crumbled the sausage and added it back into the rabe mixture at the end. I also used extra garlic and added in some red pepper flakes when sauteing the garlic.
I didn't make the polenta in the recipe, I make polenta in the microwave (gasp!), following a recipe in an old cooking light cookbook I have - basically microwave the water/cornmeal/salt mix for 12 minutes on high, stirring every 3 mins, then let sit 5 mins. It's good enough for a weeknight.
The salad was just cut up pear and leftover blue cheese over greens with a lemon vinaigrette with some slivered almonds. |

SERVES 4 (change servings and units)
Ingredients:
20 garlic cloves
2 cups sliced onions
1 cup sliced sweet pepper
3 tablespoons olive oil
3 cups tomatoes, ripe, peeled, seeded and sliced
2 cups beef stock
3-4 slices dark bread, crusts removed
salt & freshly ground black pepper
Directions:
1. Blanch the garlic in boiling water for thirty seconds; run under cold water and drain.
2. Peel and slice the cloves of garlic.
3. Cook the onions and peppers in the oil for ten minutes until the onions are golden and the peppers are soft.
4. Add the garlic and tomatoes.
5. Cover the pan and cook over low heat for thirty minutes.
6. Pour in the broth and bring to a boil.
7. Tear the bread into large pieces and add to the boiling soup where it will disintegrate and thicken the broth.
8. Adjust the amount of bread and broth to the desired thickness of the soup and salt and pepper to taste.
9. Serve hot with grated cheese if you wish. |

Well, Laura was about to send a comment to me, when she discovered that she wouldn't be writing to San Francisco Caitlin Morgan, but to another Caitlin Morgan. I've discovered that there are many of us. I'm thinking of starting a Caitlin Morgan club or group! It is such a good name after all.... :)
What did I have for dinner last night? Well, I actually had "linner," cross between lunch and dinner, at 3. I have been mostly vegetarian for a long time, but my acupuncturist has suggested the addition of some meat here and there; therefore, I indulged in a plate of birria (roast goat), rice and beans, corn tortillas and a strawberry liquada (fruit drink), at our up-the-street Mexican restaurant----nice little bistro. I confess, it was awfully good-----too good. I"m thinking about it even today! |

this is my second go'round and this time i grated zucchini into the double batch of sauce for simmering the meatballs in... soooooo yum!
i also added some bay leaves to the simmer, which i think gave it some extra ooomph. simmered almost 3 hours this time (made the meatballs smaller this time) and served over regular spaghetti noodles and sprinkle of parmesan.
we ate nearly half and the other half of the batch is currently waiting in the fridge for this weekend! :D |
