| used up the leftover rotisserie chicken for this one. basmati rice, can of cheese soup, can of milk, can of water. fresh broccoli florets, mixed it all in a casserole dish, sprinkled some paprika on top and baked for 45 minutes at 400 degrees. came out quite tasty! |

picked up a rotisserie chicken at costco - such a good deal and smells delightful all the way home.
diced it up, added diced green onions and celery. splash of poppy seeds and paprika. juuuust enough mayo (full fat, cuz, come on.. it's mayo!) and a splash of dijon mustard.
served it up on toasted kaiser rolls. tortilla chips and snap peas for sides. |

We found ourselves in China town this morning, so took advantage of the BBQ stalls, and brought home some BBQ duck. What a great base for an easy spring meal: greens sautéed quickly with soy, garlic, chilli, sesame oil and the juicy duck. Added bean sprouts, peanuts and green onions for crunch.
Served with a bowl of boiled rice and dressed with a wasabi dressing. |

Sourdough bread brushed with olive oil and balsamic vinegar
Fresh mozzerella cheese
Fresh sliced tomatoes
Fresh basil
Next time, I think I'll use butter on the bread and then dip it in the oil and vinegar. The sugar in the balsalmic, caused it to get too brown. Make it! |

I've been completely spoilt this week - DS (13) has cooked THREE times. His latest offering was chicken Parmigiana. He flattened and crumbed some chook, and added parmesan and herbs into the crumb mix. Topped with lean bacon, tomato passada and cheese, and grilled until bubbly and golden.
Served with finely sliced and fried potato/sweet potato mix and a lovely homegrown green salad. |

(My husband came up with the name). This dinner was completely made up, I hope I can remember how I did this...
I'd picked butternut squash out of the garden. Peeled, seeded and diced them and blanched for about 9 minutes. Drained in a colander, let sit with some fresh thyme sprinkled on top. Threw gnocchi into boiling water. I was wishing for ricotta cheese to toss this all in, but didn't have any. I did have whipped cream cheese so I started making something up. A little olive oil and butter in a saucepan ...generous dollop of the cheese...whisked that together but too thick so I dipped in some of the pasta water to thin it out. A heaping spoon of grated parmesan...hmm....how about some lemon zest? Whisk whisk...oh YEAH baby!
The last minute of the gnocchi cook time, I threw a big handful of baby spinach into the boiling water and let it wilt down. Drain all that. Back into the pot. Diced squash back into the pot. Cheese sauce in. Toss. Empty into a bowl. Serve.
Oh my freaking GOD!!! My husband licked his plate clean, licked the serving spoon, licked the serving bowl, then went into the kitchen and wiped the cooking pot clean with bread. It was AMAZING. I think the lemon zest was the key here, it just tied it all together.

Alrighty, so it's time to expand my cooking prowess from a smattering of a few recipes into ..well a bigger smattering.
Tried 'Beef & Corn Bake' from a casserole cookbook my mom gave me. She checkmarked this recipe with a "gd" beside it so I figured, that's all the motivation I need to augment my smattering.
I don't have a casserole dish so I used a glass baking dish thing and it worked out just fine - some burger, niblets corn, couple cups of noodles, salt, pepper, & a couple tins of tomato soup.
Brown the beef, mix it all together, pop into a casserole dish, cover with shredded Cheddar (I added a bit of flaked Parmesan for colour), bake at 350 for 45 mins or something (recipe available upon requestaroony).
Turned out pretty good but um, I'm not really too crazy about niblets in my beef..I used peaches and cream, maybe they were too flavourmatic for the concoction. Tasted better the next two days.
Was nice to try a new recipe (and wean myself off from the usual hamburger helper scenarios).
Not the most healthy thing in the world but good protein and carbs for the gym which I'm still hitting like a side of beef. rar! |

Pork, marinated in honey, soy and garlic, and cooked slowly for 2 hours. It was meltingly tender. Served with roasted sweet potato, beetroot and steamed green beans.
Dessert before dinner because it took a while to cook, and because we felt like it. Wholey unhealthy orange-soda spiders. YUM. |

so i tried something a bit different this time 'round. i marinated the salmon fillets in brown sugar, water, pineapple juice and a shot of rum. when i baked the salmon i brushed the tops with honey. wow! i will definitely be doing that again - it was so sweet and yummy!
served it up with julienned carrots, zucchini and purple onions & basmati rice. very nice dindin! |

| Spring in Brisbane is a strange season - the days can be hot (to remind us of the summer to come) and the nights breezy and cool. I spent this afternoon snoozing in the hammock on the back deck while this little number cooked gently. Beer-marinated braised beef, mushrooms and a hearty vegetable base, lots of garlic and a sprinkle of italian herbs. It cooked for 3 hours (no, I hadn't intended to snooze quite that long) - served with cheesy polenta and steamed silverbeet. No leftovers. |

Mine:
Fresh wholemeal roll filled with grilled chicken, grilled pineapple, grilled eggplant, fresh tomato, lettuce, cucumber, coriander and avocado. Topped with perinase. LOADED. |

Steak, grilled rare, served with a spring garden salad and pasta dredged with olive tapenade.
Best thing about this meal - cooked by DH, accompanied by a large glass of wine, which was poured and handed to me with a deep bubble bath while he cooked.....sigh.... |
